Tasty Tomato Snack/Appetizer

Here is the Tasty Tomato Snack with toasted Whole Wheat Dill Bread.


You probably have moments when you just want a little something good to eat without going to a lot of trouble. This happened to me yesterday. (It actually happens more often than that, but I'm ashamed to say how often.) You can get all of the ingredients for this snack at the Orange County HomeGrown Farmers Markets or Lost River Market & Deli. Here's the cure I came up with:


Toast a piece of whole wheat bread. Spread some room temperature goat cheese on the toast. (It's easier to spread when the cheese is at room temperature.) Slice a juicy fresh tomato and placed the slices on top. (The goat cheese holds the tomato slices in place.) Sprinkle the tomato slices with Kosher salt and freshly ground pepper. Top the entire snack with a couple of fresh basil leaves or a drizzle of Eric's Pesto, but any fresh herb or herb pesto would be great. Chow down.  It'll hit the spot.


For an appetizer, cut the toasts into triangles, spread with goat cheese and top them with either tomato slices or even cherry tomato slices. Serve them with fresh Chilly Dilly Lemonade
