Chocolate Chickpea Cookies

Chickpea Cookies are a deliciously fudgy and healthy cookie made with creamy almond butter, cocoa powder, and of course chickpeas. This quick and easy vegan dessert is a great way to use up extra chickpeas and satisfy your sweet tooth at the same time! Vegan and made without gluten, oil, or refined sugar. Ramp up the fun and add some of the extras noted at the end of the recipe.

Ingredients 
1 (15 oz) can chickpeas, rinsed and drained (1⅔ cup cooked chickpeas)
⅓ cup smooth almond butter, unsalted - or other nut/seed butter
¼ cup cacao or cocoa powder
¼ cup coconut sugar - or other granulated sweetener
3 Tablespoons maple syrup
2 teaspoons vanilla extract
¼ cup oat flour or Gluten Free Flour 1:1 blend (I used a blend of oat and buckwheat flours.)
¼ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon fine sea salt
½ teaspoon cinnamon, optional
⅓ cup dairy-free mini dark chocolate chips 

Instructions
Preheat oven to 350 degrees F, and line one large or two small baking sheets with parchment paper or silicone baking mats.
After rinsing the chickpeas, thoroughly pat dry with a tea towel. Transfer to a large food processor. Add the almond butter, and process to combine.
Add the cacao, sugar, maple syrup, and vanilla. Process until fully combined, scraping down the sides of the bowl as needed.
Add the flour, baking powder, baking soda, and salt, and process again. Fold in the chocolate chips.
Using a small cookie scoop (1½ Tablespoon) or measuring spoon, scoop up the cookie dough and place on prepared pan(s). Leave in a ball shape. Bake for 7 minutes. Remove from oven, and use the underside of a fork to create a crisscross pattern on top, gently flattening the cookies into shape. Bake for another 3 to 5 minutes or until golden on the bottoms.
The cookies will be very soft straight from the oven. Cool completely, then store in an airtight container in the refrigerator for up to 5 days, or freeze for longer storage.
Variations 
¼ cup nuts - for added crunch, fold in chopped pecans, walnuts, or peanuts when adding the chocolate chips.
¼ cup coconut - add shredded coconut to the batter and press a pinch into the tops of the cookies.

Banana Bread Quinoa Breakfast Cookies (Vegan & Gluten-Free)

Yield: 12-14 cookies

These were very good and will make a delightful snack or breakfast served along with a piece of seasonal fruit and a cup of tea or coffee.

1 Tablespoon ground flaxseed

3 Tablespoons water

1 cup oat flour

1 cup (gluten-free) whole rolled oats

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon or pumpkin pie spice

½ teaspoon sea salt or Kosher salt

½ cup cooked quinoa

¼ cup walnuts, chopped

½ cup almond butter

¼ cup maple syrup

½ cup mashed banana (about 1 medium)

1 teaspoon vanilla extract

2 Tablespoons melted coconut oil

Preheat oven to 350F. Line a baking sheet with parchment paper.  

In a small bowl, combine the ground flaxseed and water and set aside for 5 minutes.

In a large bowl, stir together the oat flour, oats, baking powder, baking soda, salt, and cinnamon.  Fold in the quinoa and the walnuts.

In a medium bowl, combine the almond butter, maple syrup, mashed banana, vanilla, and coconut oil.  Whisk well.

Pour the wet ingredients into the bowl with the dry ingredients.  Fold in just until combined.

Use a ¼-cup scoop to scoop the batter onto the baking sheet.  Bake for 20-22 minutes or until lightly browned and crisp.  Cool on the pan for 5 minutes and then transfer to a wire rack to finish cooling.  When the cookies are completely cool, they can be stored in an airtight container.

Oatmeal Apple Cinnamon Cookies (vegan and gluten free)

Makes 12-15 cookies

Quick and easy to make in a food processor, the cookie dough was ready to go into the preheated oven. They are chewy, moist and have excellent autumn flavors, cinnamon, apples and walnuts!  If you use gluten free oats, they’ll be a nice treat for those who can’t tolerate gluten.  

1 ¾ cup old fashioned rolled oats (175g)
¼ cup coconut sugar (47g)
1 cup walnuts (100 g)
½ cup raisins (70g) 
½ cup almond butter (125 g) You can substitute another nut butter, if you wish.
1 medium apple (170g), chopped
1/4 teaspoon salt  
1/4 teaspoon baking soda 
1 teaspoon baking powder 
1 teaspoon cinnamon 
1 teaspoon vanilla extract

Transfer all the ingredients to a food processor and process until it reaches a coarse consistency. Please note that the mixture will be very sticky right now but don’t worry it’s all good. Line a baking tray with parchment paper and scoop 2 tablespoon of the the mixture on the baking tray. Since the mixture is very sticky at this point, grease your hands with some oil or you can simply flatten it out evenly with a butter knife to 1/2 inch thickness. Preheat the oven to 350F and bake for about 18 minutes or so. The baking time also depends on the heat of your oven so adjust the baking time accordingly. Once baked let it cool and then transfer it on to a wire rack so that the cookies do not collect moisture at the bottom and to prevent it from getting soggy. The cookies are very delicate right after it's baked, so let it cool down completely before handling. Store the cookies in an air tight container to prevent it from drying out. These cookies also freezes well, you can make a back of it and freeze it for later - a grab and go breakfast. 

IMPORTANT TIPS:  The mixture is supposed to be sticky so grease your hands with some oil or you can simply flatten it out with a butter knife to 1/2 inch thickness - the baking time depends on the heat of your oven to adjust it accordingly if needed - use your judgement - some people are not very fond of raisins but it works very well for this recipe. Once the raisins are blended with the other ingredients you won’t notice it at all - the cookies are very delicate right after its baked so let it cool down completely before handling or storing it - Store the cookies in an air tight container to prevent it from drying out - these cookies also freezes well so you can make a batch and freeze it for later - a grab and go

Christmas Rocky Road (vegan)

These treats are absolutely delicious and perfect for novice cooks.  They make a lovely holiday treat to give away or to serve at a party.  

Bar Ingredients
8.8 oz (250 g) dairy-free dark chocolate
4.2 oz (120 g) unsalted vegan butter, cubed
2 Tbsp (30 mL) maple syrup
7.1 oz (200 g) Biscoff Speculoos Cookies (I used “Lotus” cookies which can be found at most supermarkets or specialty stores. See photo below. You can also swap out these cookies with gingersnaps.)
1½ cups (99 g) vegan marshmallows, roughly chopped
½ cup (80 g) dried cranberries or dried cherries
½ cup (62 g) roasted salted pistachios 

Topping Ingredients
2 Tbsp (15 g) roasted salted pistachios, finely ground
2 Tbsp (3 g) freeze-dried cranberries, finely ground

Directions
Line an 8-inch (20 cm) square baking dish with parchment paper.
Break the chocolate into pieces and place it into a heatproof bowl with the butter and maple syrup. Melt it over a pot filled with gently boiling water on the stove. Set aside once melted.
In a large bowl, roughly crush the cookies, then add the chopped marshmallows, cranberries and salted pistachios.
Pour the chocolate mixture into the bowl with the cookie mixture and mix until everything is coated in chocolate.
Transfer the mixture to your lined dish and press it down very firmly.
Sprinkle the finely chopped pistachios and freeze-dried cranberries on top.
Refrigerate for 3 hours to set, then cut into bars or squares. Wrap them as a gift if desired, and enjoy!

Storage
Store in an airtight container in the fridge for up to 2 weeks. Store in the freezer for up to 2 months.




Raw Lemon and Poppy Seed Treat (gluten free/vegan)

You know how it is at holiday time, candy and cookies galore.  I wanted to make a treat, but a more healthful one.  This must be made in advance because it requires freezer time.  These can be made into sticks, cubes, or even balls.  They taste lemony with the sweetness of dates.

1 cup raw cashews
½ cup shredded coconut 
Pinch of salt
1 small lemon, zest and juice
¾ cup pitted sticky dates
1 Tablespoon cashew butter
2 teaspoons poppy seeds

Pulse cashews, coconut, salt and lemon zest into a fine gravel consistency in a food processor with an S-blade.
Add the lemon zest and juice, starting with half the lemon juice.  Add the dates, and process on auto until almost completely combined.
Taste and adjust the lemon flavor by adding more lemon juice if you would like it more tart.  Also, add the poppy seeds and then process on auto until completely combined.  The mixture should stick together like a ball in the processor with ready.
Line a bread tin* with parchment paper so that there’s an overhand on the long ends and press the mixture into the tin using the back of a spoon or spatula.  (You can also simply roll the mixture into balls if you prefer.) Place the tin in the freezer for at least three hours or until you are ready to eat.
Slice it into fingers or cut it into cubes and enjoy.

*I doubled the recipe and lined an 8” X 8” baking pan with parchment paper.

Best Peanut Butter Cookies Ever

Makes about 24 cookies

These fabulous peanut butter cookies are dangerous.  You will need major will power to keep from eating them all at once.  Absolutely scrumptious!!!

7.5 ounces by weight all-purpose flour (1.5 cups measured) 
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon kosher salt
1/2 cup unsalted butter softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar* (I used dark brown sugar, but light will work too.)
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup creamy peanut butter**
Flaky sea salt, optional for sprinkling over the top

Preheat the oven to 350F.
(I highly recommend weighing out the flour before using.) 
In a medium bowl, whisk to combine the flour, baking soda, baking powder, and salt. 
In another medium bowl, use a hand mixer to cream together the butter, sugar, and brown sugar, for about 60 seconds, until fluffy and light.
Mix in the egg and vanilla extract for about 30 seconds, until combined.
Mix in the peanut butter for an additional 30 seconds, until combined.
Add the dry ingredients to the wet, then mix just until the flour is incorporated. Take care not to over mix.
Using a medium cookie scoop, portion out scoops of dough directly onto a baking sheet. (Try not to smooth out the cookies.  What makes these especially nice, is the texture of the "rough ridges" you get when scooping out the dough.) You should get about 24 scoops of dough total (split them between two baking sheets).  If desired, sprinkle each cookie with flakey sea salt.
Bake*** for 13 minutes, until the edges are golden, but the middle is still soft. Let them cool for a couple minutes before eating. They are especially fantastic enjoyed warm out of the oven. 

Notes
*I've used both light and dark brown sugar and each works well. Use whichever you have.
**While you may have happy results using a natural peanut butter, using the creamy variety will make for a better texture. When using natural peanut butter, the cookies may be more crumbly and dry, with an inferior texture. Brands like Skippy, Jif, organic Whole Foods Brand etc. make peanut butters that are very creamy and spreadable. 
***Do not over bake these. Keep in mind that when you take the cookies out of the oven, they should seem excessively soft. There will be a little bit of carryover cooking, and the cookies will firm up as they cool, so you want to err on the side of underbaking. If the cookies turn out dry, simply put, they were over baked. They should be moist and gooey on the inside.

Freezing:
Completely Baked Cookies: Complete the recipe start to finish, then let the cookies cool completely. Place the cookies in an airtight container and freeze for up to 2 months. To enjoy, let them thaw at room temperature, for about 30 minutes.
Unbaked Dough: You can also freeze these unbaked. Scoop the dough onto a baking sheet, then freezing completely. Then remove the frozen dough balls from the tray and place in a bag to save space. For this recipe, thaw the dough back to room temperature before baking, which should take about an hour. If bake these straight from frozen, they won't bake quite as evenly.

Storage: Make sure to store these in an airtight container, or they will dry out. These cookies will last about two days at room temperature before losing too much flavor and freshness. Technically they will keep longer than this, but I think the taste is too inferior, and at that point you’d be better off freezing them. See the freezing instructions above.

Make-ahead instructions: After making the dough, scoop it while it's still at room temperature, then keep those dough scoops in the fridge on a sheet pan. Otherwise, you'll need to bring the dough to room temperature in order to scoop again. Make ahead up to 2 days in advance. 

Double-batch: You can absolutely double or triple this recipe with no problem.

Strawberry Oatmeal Bars (Vegan)

We thought these strawberry oatmeal bars were delightful.  Of course, the husband loved having this seasonal treat.  These had just the right amount of sweet to them.  By using mashed banana and just a bit of maple syrup, the flavor of the berries really comes through. (I followed the original recipe to the letter, with this exception… I added about ½ teaspoon vanilla to the berry mixture and ¼ teaspoon almond extract plus ½ teaspoon sea salt to the dough mixture.)

Dough:

2 cups (205 g) oats 

1 cup (120 g) almond flour* 

1 cup (90 g) oat flour 

1 small (80 g) banana, mashed* 

1/4 cup (80 g) maple syrup or agave syrup

1/4 cup (60 g) canned coconut milk*

2 teaspoon baking powder

½ teaspoon sea salt

¼ teaspoon almond extract

Strawberry Filling:

3 cups (450 g) diced strawberries

1/3 cup (105 g) maple syrup or agave syrup

2-3 teaspoon fresh lime or lemon juice

5 teaspoon chia seeds

3 teaspoon cornstarch or potato starch 

½ teaspoon vanilla extract

Instructions:

(I highly recommend using a kitchen scale for this recipe and measuring the ingredients in grams.) 

Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius).

Put the ingredients for the strawberry filling in a saucepan, bring to a boil, let it simmer for 5-10 minutes, and stir occasionally.

Mix all ingredients for the dough in a bowl by either using your hands or a hand mixer.

Press 2/3 of the dough evenly into a greased or lined baking dish. The pan I used measured 7 x 11 inches (18 x 28 cm).

Pour the strawberry filling over the crust.  Crumble the remaining 1/3 dough on top.  Bake in the oven for 20-25 minutes. 

Notes:

*Banana: Use banana or applesauce for a low-fat version. If you prefer a flaky/buttery soft crust, I would recommend using 40 grams banana (or applesauce) and 40 grams vegan butter (margarine).

*Almond flour: You can use any ground nuts/seeds of choice (e.g. hazelnuts, shredded unsweetened coconut) instead of almond flour.

*Coconut milk: You could use oat cream or soy cream instead of canned coconut milk.

*Other reviewers said that the bars could be frozen for up to 3 months.  Other berries can be used.  Frozen strawberries/berries will work.

Plant Based Magic Cookie Bars (Vegan)

Makes 8 Generous Servings OR 16 Perfect Treats

These scrumptious treats will be perfect for the lunchbox or a picnic. They are quite easy to make using a high speed blender and would be a great snack to make on your food prep day.  I love that they are sweetened with dates.  

Crust
1 cup (120g) almond flour
1 cup (80g) gluten-free rolled oats, ground into a flour
1/2 cup (112g) pitted dates
1 teaspoon Braggs liquid aminos (This may sound like a strange addition, but you won't taste it at all.  You can substitute sea salt for the liquid aminos, if you wish.)
Filling
1/3 cup (26g) gluten-free rolled oats
1/3 cup (75g) pitted dates
1 cup (236ml) water
1 teaspoon vanilla extract
Toppings
1/2 cup (47g) shredded unsweetened coconut
1/2 cup (85g) vegan chocolate chips
1 cup (150g) chopped pecans 

Preheat oven to 350°F (180°C). Grease or line a 9" X 9" (or 8" X 8") baking pan with parchment paper.  
Blend crust ingredients in a blender or food processor until mixture almost sticks together when pressed together. 
Press crust firmly into the bottom of the greased or parchment-lined baking pan.
Blend the filling ingredients in the same blender until dates are completely pulverized.
Pour filling over the crust. (The filling will be thin or watery.  It's okay.  It will turn out in the end.)
Sprinkle the toppings one at a time over the filling and lightly press the toppings down with a fork so that a little of the filling comes through.
Bake for 35 minutes.  Cool completely before serving.  Cut into 8 bars or 16 small squares.  Store in an airtight container in the fridge.

Almond, Prune and Apricot Breakfast Bars (Gluten-Free)

Makes 12 bars

While these were named breakfast bars, I think they make a much better snack or lunchbox addition or even a lovely gift for a favorite friend.  We loved everything about these bars.  The texture is tender and chewy with a bit of crunch.  The sweetness is the right amount, due to the dried fruit and the bit of honey.  And there's a little kiss of almond and orange.   

1/2 teaspoon zest 
3 Tablespoons fresh orange juice
1/2 cup dried apricots, chopped
1/2 cup prunes, chopped
2/3 cup sliced almonds, plus a few extra for the top
1 1/2 cups quick oats
2 Tablespoons ground flax seed 
2 Tablespoons oat flour
1/2 teaspoon fine sea salt
1/4 ground cinnamon
1/4 cup plus 2 Tablespoons almond butter
1/4 cup olive oil
1/4 cup honey (One of the original recipe reviewers replaced the honey with maple syrup, which would make these vegan.)
1/4 teaspoon almond extract

Preheat the oven to 325F.  Line the bottom and sides of an 8" X 8" square baking pan with parchment paper and set aside.
Place the chopped dried fruit in a heat proof bowl.  Put the orange juice in a small saucepan and bring to a bare simmer over a medium flame.  Pour the hot orange juice over the dried prunes and dried apricots, stirring a bit.  Set this aside.
Spread the sliced almonds on a baking sheet and toast in the oven until fragrant, about 5 minutes.  Put the sliced almonds in a large bowl along with the oats, ground flax, the oat flour, salt and cinnamon.
In another bowl, put the orange zest, add the almond butter, olive oil, honey and almond extract and whisk to combine.
Add the almond butter mixture and the dried fruit mixture to the oat mixture and stir until well combined.
Scrape the mixture into the lined baking pan.  Use moistened fingers to press it firmly and evenly into the pan.  Sprinkle with the extra almond slices and press them in a bit.
Bake until the top is golden, about 25-30 minutes.  Place the pan on a cooling rack and allow to cool completely before removing with the parchment paper "handles" to a cutting board.  Use a sharp large chef's knife to cut the bar into 12 pieces.
The bars will keep well in an airtight container at room temperature for up to a week.

Dark Chocolate-Dipped Coconut Macaroons (Gluten-Free)

Makes 8 macaroons

When you are compelled to utter "mmmm" after each bite, you know you've found a great keeper of a recipe.  These are fantastic and so easy to make, you will want to make a few batches.  They are very pretty too and would look especially nice on any dessert platter.

2 large egg whites
1/4 cup honey (I used raw honey.)
1 teaspoon vanilla extract
1 teaspoon kosher salt
2 cups unsweetened coconut flakes (finely shredded, not the big flakes)
4 ounces dark chocolate, chopped or use chips

Preheat the oven to 325F.  Add the add the egg whites, honey, vanilla extract and salt to a heat-proof mixing bowl.  Place the mixing bowl on top of a saucepan with 1-2 inches of simmering water (creating a double boiler).  Stir the mixture (I used a whisk.)  for 5 minutes, until frothy and very warm to the touch.  
Add the coconut and stir it into the mixture until it's well combined and no liquid remains.
Using a medium cookie scoop (1 1/2 Tablespoons) place mounds of the batter onto a parchment lined baking sheet.  Bake the coconut macaroons for 25 minutes, checking on them towards the end to make sure they're not browning too quickly.  
Let the cool completely on the baking tray before removing otherwise they may fall apart.
Meanwhile, wash and dry the bowl and set it over simmering water again.  Place the chocolate in the bowl.  Stir until the chocolate is melted and smooth.  
When the macaroons are completely cooled, dip them into the melted chocolate.  Return them to the parchment paper lined baking tray and chill in the fridge for 5 minutes or until the chocolate is firm.  
Tip: If you have any leftover melted chocolate, you can dip dried or fresh fruit into it, such as dried apricots or banana slices, etc.  (Below you will see a jar of chocolate dipped dried apricots that I made using the leftover chocolate.  They made a great snack.)
To Store: Store the macaroons in an airtight container in the fridge for up to a week.  They can be frozen for up to 3 months.  Just be sure to layer parchment paper in between so that they don't stick.  To defrost, let them sit on the counter at room temperature to soften them before serving.

Kitchen Sink Whole-Grain Cookies

Makes 20 (3-inch diameter) cookies

These cookies are just scrumptious.  These were originally called breakfast cookies, but I think of them more of a treat to be enjoyed with a hot cup of coffee or tea. When I first made them, I used the exact measurements for the sugar and maple syrup.  We thought they were plenty sweet and next time, I will use less of each. They would be a great addition to any picnic basket or lunchbox.  Because there are quite a few ingredients, I would suggest making a few batches of the dry ingredients and then storing two batches in jars or bags in the fridge.  Then, when you are ready for a little pick-me-up, just add the “wet” ingredients and bake.

1 cup walnuts
1½ cups old-fashioned rolled oats
¼ cup steel cut oats (or ¼ cup more old-fashioned rolled oats.)
1/3 cup whole-wheat flour
½ cup ground flax seed meal
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup almond butter or peanut butter
1/3 cup liquid coconut oil*
¼ cup (or less) coconut sugar* or brown sugar
¼ cup (or less) maple syrup or agave
2 large eggs, room temperature
1½ teaspoon vanilla extract
½ cup dried raisins or cherries or currants
¼ cup unsweetened shredded coconut
½ cup chopped nuts (walnuts, pecans, hazelnuts or almonds) and/or bittersweet chocolate chips

Preheat oven to 375F. Line a baking sheet with parchment paper or silicone baking mat and then set aside.  Pulse the walnuts in a food processor until a coarse meal or flor forms; transfer to a large bowl.  Add the oats, whole-wheat flour, flax meal, baking soda, salt, and cinnamon.  Whisk to combine.  Add the almond butter, coconut oil, sugar, maple syrup, eggs, and vanilla extract.  Using a large spatula, mix until a sticky dough forms.  Fold in the dried fruit, coconut and nuts or chocolate chips.  Allow the dough to rest for 5 minutes.  Scoop the dough onto the prepared baking sheets. Lightly press the dough down to flatten a bit (about 3 inches in diameter.) They won’t spread out much at all during baking.  Bake for 7-9 minutes or until the edges become lightly golden brown in color.  Remove from oven and allow to cool for 2-3 minutes before transferring to a wire rack to cool completely.

*Notes:  If using coconut sugar, allow it to dissolve, in the warm coconut oil for 5 minutes before proceeding with the remaining steps.

One-Bowl Blueberry Almond Breakfast Cookie


One-Bowl Blueberry Almond Breakfast Cookie 
with 1/2 an apple and some hot homemade ginger tea.

Well, what a discovery! These balls of yumminess are loaded with good-for-you ingredients.  They are very easy to make, and especially to clean up because they are made in one bowl. They are slightly sweet, but instead of refined sweeteners, these are sweetened with a very ripe banana, berries, and a bit of dark chocolate.  Have one of these cookies along with a piece of whole fruit for a satisfying breakfast or snack.   

1 very ripe banana, peeled
2 Tablespoons almond butter
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
½ cup raw almond meal/almond flour
3 Tablespoons ground flax seeds
1 Tablespoon chia seeds

½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon Kosher salt

1¼ cup rolled oats
2 Tablespoons pumpkin seeds

½ cup frozen blueberries
¼ cup chopped dark or bittersweet chocolate chips

Preheat the oven to 350F and place parchment paper on a cookie sheet. 
Add the banana to a large bowl and mash well.  Then mix in the almond butter, applesauce, and vanilla, whisking until well combined.  Then add the almond flour, flax and chia seeds, mixing until combined.  Then add the baking soda, cinnamon, and salt, stirring again to combine.  Then stir in the oats and pumpkin seeds.  Gently fold in the chocolate and blueberries.  Use an ice cream scoop, scoop out 12 balls of dough and space them out evenly on the cookie sheet.  Bake for 15-16 minutes.  Remove from the oven and let cool for 2 minutes before transferring to a cooling rack to cool completely.

NOTES:
·       You can substitute the pumpkin seeds with any other seed or dried fruit.  You can also use other frozen berries instead of blueberries.
·       Store in an air-tight container on the counter for one day or wrap individually and store in the freezer for up to two months.  Either reheat to enjoy immediately or allow to defrost naturally for about 1-2 hours if enjoying as a snack later in the day.
·       By my calculations, each cookie equals about 143 calories and has 3.9 grams of fiber.
