Carrot Cake Baked Oatmeal (Vegan)


Makes 8 servings

These baked oats are sooooo delicious.  Make a batch tonight so that you’ll have a great breakfast to look forward to all week.  I serve mine topped with Homemade Instant Pot Cashew Yogurt and whatever fruit/berries are in season.  

Ingredients
2 cups rolled oats
¾ cup oat flour
2 tsp cinnamon
1 tsp ground ginger
1½ tsp baking powder
1½ cups grated carrot
2 cups unsweetened cashew milk or other plant milk (I use soy milk.)
½ cup unsweetened vegan yogurt 
⅓ cup maple syrup
1 tsp vanilla extract
¼ cup crushed walnuts or pecans plus more for topping, if desired

Cashew Cream Cheese Icing (Optional) I just topped mine with plain yogurt each morning.
1 cup cashews unsalted
1 cup unsweetened coconut yogurt
½  lemon, zested and juiced
¼  cup maple syrup

Instructions
Preheat the oven to 375F and grease or line a 9 x 13 baking dish with parchment paper.
Add all of the dry ingredients apart from the walnuts to the baking dish, including the oats, oat flour, baking powder, cinnamon and ginger. Mix. Then add the wet ingredients, including the carrot, yogurt, maple syrup, plant milk and vanilla. Stir until fully combined.
Top with crushed walnuts if desired, and place in the oven for 50 to 55 minutes until cooked through.
While the baked oatmeal cooks, you can make the optional cashew cream cheese icing by adding all listed ingredients to a high speed blender or food processor. Combine until smooth, and ice the top of the oatmeal once cooled. Store the oatmeal in the refrigerator for up to 4 days.

Notes
If you don't have oat flour, you make your own in a food processor or coffee grinder. Simply grind some oats until you get a fine flour.
For a nut-free version, you can use sunflower or pumpkin seeds. As for the frosting, you can blend up some plain tofu instead of the cashews.
It's possible to make a similar baked oatmeal dish using zucchini. Bear in mind, zucchini has a higher water content, so you will need to squeeze the moisture out before adding zucchini into the pan.

Banana Bread Baked Oatmeal (Vegan, gluten-free, nut free option)

Makes 6 generous servings

This scrumptious breakfast can be made in a jiffy using only the baking dish, so easy clean-up. Using spotty bananas will make the baked oatmeal especially sweet.  Serve this with a dollop of vegan yogurt and some fresh seasonal fruit for a lovely, tasty breakfast.

2 large ripe bananas, mash (The spottier the bananas, the sweeter the final result.)
1 1/3 cup (330ml) plant milk (I used unsweetened soy milk to bump up the protein.)
1/4 cup (60g) nut or seed butter (I used almond butter.)
4 Tablespoon maple syrup (You can also use agave syrup.)
1 teaspoon vanilla extract
2 cups (200g) old fashioned oatmeal (To make this gluten free, use gluten free oats.)
2 teaspoons baking powder
¼ -1/3 cup dark chocolate chips
Optional: ½ banana, sliced for decoration

Preheat the oven to 200C/400F. Use a baking dish.  (I used a 1½ quart 8” X 10” Corningware baking dish.) With a fork, mash the two large very ripe bananas right in the dish.  Stir in the nut/seed butter, the maple syrup, and the vanilla until well combined.  Slowly add the plant milk.  Stir until well combined.  
Add the oats, baking powder and the chocolate chips and stir well until everything is well incorporated. Decorate with some banana slices, if using.
Bake at 200C/400F for 30-35min and let it cool a few minutes before serving or storing.  Store in the refrigerator or the freezer.

Orange Spiced Overnight Oats

Makes 4 generous servings

I’m loving Julia Maiten’s recipes.  This one is especially nice with fragrant hints of orange, fennel and cardamom.  The recipe makes a large batch* that can be stored in the fridge and portioned out in the morning and topped with all sorts of fruits, berries and/or nuts and seeds. Julia is in her early 20’s and a runner.  Her recipe states that this makes 2 portions*, but since I’m well past my 20’s and I prefer walking, this makes breakfast for me for several days. 

1 teaspoon fennel seeds
4 pods of cardamom
1 cup (110g) rolled oats
½ cup (55g) quick-cooking oats
2 Tablespoons chia seeds
½ teaspoon cinnamon
Pinch of Kosher or sea salt
Zest from 1 orange
Juice from 1 orange 
1½ cups (375ml) soy milk
14 oz. (400g) plant based yogurt (I used Homemade Instant Pot Cashew Yogurt.)
Maple syrup, to taste

Topping Ideas: fresh or dried apricots, fresh or frozen blueberries, toasted macadamias or walnuts, flakey sea salt, extra plant-based milk, fresh chopped apple, maple syrup, sliced banana

Directions: Add the fennel seeds and shelled cardamom seeds into a small dry skillet and toast until fragrant. 
Grind using a mortar & pestle or spice grinder.
Into a large bowl, add the spices along with the remaining ingredients and mix well. 
Allow to chill for at least 1 hour.  
When ready to serve, portion out into bowls and add toppings as desired.

Nut Butter Banana Breakfast Muffins (Vegan)

Makes 11-12 standard size muffins

These tender, fluffy muffins are perfect to prep ahead and keep in the freezer for a quick breakfast or snack. I did use a scale to make these instead of using measuring cups.  
The original recipe said it yielded 8 muffins, but I think she used a jumbo sized muffin tin.  I was able to make 11 muffins in a standard muffin tin.  I did fill the muffin tins a bit over the top, so I’m thinking if you filled the tins to the rim, you could get a dozen lovely muffins.  The original recipe called for peanut butter, but I had a partial jar of almond butter and a partial jar of cashew butter and wanted to use them up.  I’m thinking that if you can’t have nuts, you could use seed butter as well, such as sunflower seed butter or even tahini. I used some spelt flour along with all-purpose flour to make these a bit more healthful. I will definitely make them on repeat!

Ingredients:
3 large bananas, mashed (My bananas were huge, so I used 2½ huge bananas.)
2 Tablespoons flax meal 
2 Tablespoons water
90g nut butter (I used a mixture of cashew and almond butter.)
70g maple syrup
1 teaspoon vanilla extract
200g flour, or a mix of oat flour & flour (I used 100 g spelt flour + 100 g all-purpose flour.)
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of kosher salt
½ cup dark chocolate chips, plus more for optional topping
Toppings: rolled oats, dark chocolate chips, optional

Instructions:
Preheat the oven to 180°C/360°F.  Line a standard muffin tin with paper liners.  (You can use oil spray if you wish.)
In a small bowl, mix the flax meal and the water and set aside. (This will become thick and will serve as the “egg.”)
Measure the flour(s), the baking soda, baking powder, and salt in a medium bowl.  Whisk until blended well.
Mash the bananas on a dinner plate and set aside.
In a large bowl, measure out the nut butter, maple syrup, and vanilla.  Add in the mashed bananas and the flax meal “egg.”  Stir well until all the wet ingredients are well mixed.
Add the dry ingredients to the wet ingredients and stir just until combined.  Gently stir in the chocolate chips.  
Scoop the batter into the muffin lined tin.  Top each muffin with a sprinkle of dry oats (I used quick oats.) and a few dark chocolate chips for garnish, if you wish.
Bake at 180°C/360°F for 25 minutes.  
Allow the muffins to cool just a bit before serving right away. 
They should cool completely before storing or freezing.
For a full meal, serve with yogurt, fresh seasonal fruit and/or berries and seeds.

Copycat Clif Kid Z Chocolate Brownie Bars (vegan)


Makes 10 to 12 small bars

Delicious bars that I think tastes better than Clif Kid Zbars brownie flavor! These are easy to make in the food processor with a short time in the oven. They'll make a great addition to lunchboxes.

The bars:
2 cups old fashion rolled oats, divided
½ cup dried figs or pitted dates (I used dates.)
2 Tablespoons cocoa powder (Cacao powder can be used instead.)
2 Tablespoons molasses
1 Tablespoon maple syrup (Honey was listed in the original recipe, but then these wouldn’t be vegan.)
¼ cup sugar (I used coconut sugar.**)
½ teaspoon kosher salt
1 teaspoon vanilla
1 Tablespoon coconut oil (melted)
1/8 teaspoon baking soda
¼ cup semi-sweet chocolate chips (I used dark chocolate chips.)
½ cup water

For chocolate drizzle on top:
1/3 cup semi-sweet chocolate chips (I used dark chocolate chips.)
½ teaspoon coconut oil (optional)

Preheat oven to 350 F.
In a food processor add 1 cup old fashion oats, dried figs or dates, cocoa powder, molasses, honey, sugar, salt, vanilla, melted coconut oil, baking soda, chocolate chips and water.
Blend on high, stopping and stirring and pulsing until the mixture is smooth.
Add the final 1 cup of old fashion oats and blend until smooth or to have slightly more
textured bars briefly stir the mixture so the oats retain some texture.
Empty batter onto a parchment paper lined or greased cookie sheet. (I found it was easiest to spray an offset spatula with a bit of oil before spreading the batter.)
Spread into a large rectangle about 1/3 to 1/2 inch thick. (Note the batter will not fill the entire cookie sheet.)
Bake for 10-13 minutes or until tops are no longer sticky.
Remove from oven and allow to cool before slicing. The pieces can be slightly molded
too so you can round out the edges of the bars if desired.
Allow the bars to cool completely before the next step.
In a microwave safe bowl, add chocolate chips (and coconut oil, if using) and melt in microwave for 30 seconds, stir and an additional 30 seconds if needed to melt the chocolate chips.
Using a spoon, drizzle the melted chocolate in a zig zag pattern over each bar. (You can also place in a zip lock bag, snip the end off and make a zigzag pattern.) 
Place the bars in the freezer for 15 minutes to allow the bars and the chocolate drizzle to set. 
Store the bars separated by parchment paper in the fridge or freezer.

**While both sugar and coconut sugar are sweeteners, the key difference is that coconut sugar is derived from the sap of coconut palm trees, making it slightly less processed and containing trace amounts of minerals like potassium, iron, and zinc, whereas regular sugar (table sugar) is highly refined and lacks these nutrients; however, both have similar calorie counts and should be consumed in moderation.

Toffee Banana Breakfast Bread (Vegan)

Makes 8-10 slices

I just love breakfast and my day is made when I eat a really good one.  I saw this on Julie Maiten’s YouTube channel (one of my faves) and she said she found the recipe on Instagram.  So I gave it a try.  Though it looks decadent, it’s wholesome, filling and very satisfying with a hot cup of Joe.  It’s sweetened not with sugar, but with dates and bananas. To gild the lily, just top it off with yogurt and drizzle with mixture of tahini and maple syrup.  Sprinkle on some toasted pecans for a lovely crunch. This one is a new breakfast for us all to have on repeat.

Ingredients for the Bread:
5 pitted medjool dates
Scant 2 cups (320g) mashed very ripe banana (about 2 large bananas)
¼ cup (80g) vegan yogurt (I used Homemade Instant Pot Cashew Yogurt.)
1 teaspoon vanilla extract
1/3 cup (80 ml) milk of choice (I used soy milk.)
(180g) whole wheat flour
¾ cup (80g) old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
2 Tablespoon ground flax seed
3 teaspoons ground cinnamon
Pinch of kosher salt 

Topping Ingredients for Two Slices:
Vegan Yogurt (I used Homemade Instant Pot Cashew Yogurt.)
1 Tablespoon tahini
½ Tablespoon maple syrup
Splash of plant milk, to thin, if needed
Toasted pecans* or other nuts, roughly chopped

Preheat the oven to 350F.  Line a 9” X 5” loaf pan with parchment paper.  Set aside.
Soak the dates in hot water for 10 minutes/until soft. 
Add the milk, vanilla, yogurt and bananas to a high speed blend.  Add the pitted, soaked and drained dates.  Blend until smooth. Set aside.
Measure the flour, oats, soda, powder, flax meal, cinnamon, and salt into a large bowl.  Whisk until completely mixed.
Add the date milk mixture to the dry mixture.  Stir just until combined.  Do not over mix.
Put the batter into the lined loaf pan.  
Bake for 45-60 mins at 350F (180C) or until nice and golden on the top. Wait until the loaf is completely cool before cutting. Cut into 8 to 10 slices.
You can freeze the sliced loaf with baking paper between each slice.  Reheat in a toaster, oven or microwave. 



*To toast pecans in the oven, preheat the oven to 350°F (180C), spread the pecans evenly on a baking sheet, and bake for 5-8 minutes, stirring halfway through, until they become fragrant and slightly darker brown in color; be sure to watch them closely as they can burn quickly.

Blueberry Quinoa Breakfast Bars (vegan & gluten-free)

Makes 16 bars

Healthy vegan blueberry breakfast bars with oats, quinoa, coconut sugar, ripe banana, flax eggs, and fresh berries that are vegan and gluten-free. Be sure to read some of the variations in the notes below.  These were a nice change from my usual breakfast. If you have some leftover quinoa in the fridge, this recipe is a great way to use it up. I served these by smearing some Homemade Instant Pot Cashew Yogurt in a bowl and then topping the yogurt with the bars. I added sliced kiwi to get another fruit in my day.

Ingredients
1½ cups quick cooking oats  
1 cup cooked quinoa  
1 teaspoon baking powder  
1/3 cup coconut sugar  
1/4 cup hemp seeds or pumpkin seeds (pepitas)
1 cup mashed bananas about 2 medium
2 flax eggs (2 Tablespoons flaxseed meal + 6 Tablespoons of water)
2 Tablespoons nut/seed butter
2 Tablespoons fresh lemon juice
1 teaspoon vanilla extract 
1½ cups fresh or frozen blueberries (You can also use a mix of frozen blueberries and raspberries)

Instructions
Preheat the oven to 350 degrees F. Line a 9"x 9" baking sheet with parchment paper and grease the sides with cooking spray.
In a large mixing bowl, whisk together the oats, quinoa, sugar, baking powder, and hemp seeds.
In a separate bowl, mix the banana, nut butter, flax eggs, lemon juice and vanilla. Pour this mixture over the dry ingredients, mixing everything together until fully incorporated. The batter should be moist, but not runny. Fold in the blueberries
Transfer the batter into the prepared pan and smooth with a spatula.
Bake on the center rack for 25 - 35 minutes until the bars are golden brown and firm to the touch.
Remove and let cool completely in the pan, then remove and slice into squares (or rectangles). Store in an airtight container for 4 - 5 days.

Notes
The author found that she enjoyed the texture of the bars best after being cooled on a wire rack overnight because some of the added moisture from the blueberries was removed and she found that they were even more hearty.
You can reduce the sugar to 2 Tablespoons instead of 1/3 cup.  
You can replace ½ cup of the oats with ½ cup shredded unsweetened coconut. 
You can substitute almond extract for the vanilla extract.
According to reviewers, you can also bake these in an 8”x8” pan or a standard muffin pan.
Another reviewer makes these as muffins in a standard muffin pan.

Gingerbread Energy Balls (vegan)

Makes 18-20 Tablespoon-size balls**

Gingerbread energy balls are the perfect festive snack. Toasted nuts are key to that warm holiday flavor. Filling, simple, & delicious!

1 cup pecans, toasted
½ cup walnuts, toasted
1½ cup quick oats
½ cup raisins, softened in hot water
Sprinkle of salt
1 teaspoon ground cinnamon
1½ teaspoon ground ginger
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice
Pinch of ground nutmeg
2 Tablespoon molasses
1-2 Tablespoons maple syrup
Cinnamon for coating (optional)

If the nuts you are using are not already toasted, toast the pecans and walnuts at 350 degrees F for 6-10 minutes. I find that pecans take a little longer to toast than walnuts so watch them closely and consider using two trays so you can remove the walnuts earlier.
In the meantime, soften the raisins in hot water for about 5 minutes so they will blend easily. *You will drain the raisins from the water for the next step but be sure to reserve some of the soaking water in case your energy ball mixture is a little dry.
Add the cooled nuts, oats, softened and drained raisins, and spices to the bowl of a food processor and pulse to break down the nuts and combine the ingredients.
Add the molasses and maple syrup. Blend until the mixture starts to clump and form a ball in the food processor. You want the dough to stick together between your fingers. *If your dough seems a little dry splash in a tiny amount of the water the raisins soaked in and blend again. Adding too much liquid will make the energy balls feel damp and oily so add any water in small increments.
Scoop Tablespoon amounts of your dough and roll it between your palms to create a ball. Roll the energy ball in extra cinnamon if desired for a little more festive flavor. Repeat with the remaining dough.  Sprinkle or roll in ground cinnamon, if desired.
Store in an airtight container in the fridge for up to 1 week or in the freezer for longer storage. I love keeping my energy balls in the freezer because they stay quite soft and I usually only have to wait a few moments after taking them out of the freezer to enjoy them.

Notes:
Feel free to substitute the raisins in this recipe with dates.
If using a blender instead of a food processor, make sure to pulse the dry ingredients first to encourage them to break down before adding the molasses and maple syrup. You can remove the dough from the blender if it is clumping up too much and continue to mix it with a spoon or your hands. Adding small amounts of the raisin soaking water can help it stick if needed.
Almond flour will work really well. Even adding in a bit of flaxseed meal, ground sunflower, or ground sesame seeds would work too!
**I used my smallest scoop to make these and doubled the recipe as well.  I was able to make 48 little energy balls.

Banana Bread Quinoa Breakfast Cookies (Vegan & Gluten-Free)

Yield: 12-14 cookies

These were very good and will make a delightful snack or breakfast served along with a piece of seasonal fruit and a cup of tea or coffee.

1 Tablespoon ground flaxseed

3 Tablespoons water

1 cup oat flour

1 cup (gluten-free) whole rolled oats

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon or pumpkin pie spice

½ teaspoon sea salt or Kosher salt

½ cup cooked quinoa

¼ cup walnuts, chopped

½ cup almond butter

¼ cup maple syrup

½ cup mashed banana (about 1 medium)

1 teaspoon vanilla extract

2 Tablespoons melted coconut oil

Preheat oven to 350F. Line a baking sheet with parchment paper.  

In a small bowl, combine the ground flaxseed and water and set aside for 5 minutes.

In a large bowl, stir together the oat flour, oats, baking powder, baking soda, salt, and cinnamon.  Fold in the quinoa and the walnuts.

In a medium bowl, combine the almond butter, maple syrup, mashed banana, vanilla, and coconut oil.  Whisk well.

Pour the wet ingredients into the bowl with the dry ingredients.  Fold in just until combined.

Use a ¼-cup scoop to scoop the batter onto the baking sheet.  Bake for 20-22 minutes or until lightly browned and crisp.  Cool on the pan for 5 minutes and then transfer to a wire rack to finish cooling.  When the cookies are completely cool, they can be stored in an airtight container.

Berry Baked Oatmeal (vegan and gluten free)

This berry baked oatmeal is a beautiful and nutritious way to start the day. It's easy to prepare, tastes amazing and will fuel you for whatever the day holds!

Ingredients
2 ripe bananas cut into ½-inch slices
1 flax egg*
1⅔ cups unsweetened almond milk
⅓ cup maple syrup
2 teaspoons vanilla extract
1 teaspoon baking powder
1½ teaspoons ground cinnamon
½ teaspoon fine-grain sea salt
2 cups old-fashioned rolled oats
½ cup toasted* chopped walnuts, divided
1½ cups blueberries and chopped strawberries

Instructions
Preheat your oven to 375 °F and spray an 8x8 inch square baking dish with cooking spray.
Slice your ripe bananas and place them in a layer on the bottom of your baking dish. Set it aside.
In a large mixing bowl prepare your flax egg by whisking together 1 Tablespoon of ground flaxseed and 3 Tablespoons of water. Allow it to sit for 5 minutes to thicken.
Once the flax egg has thickened, whisk in the non-dairy milk, maple syrup, vanilla extract, baking powder, cinnamon and sea salt.
Lastly, stir in your rolled oats, toasted walnuts and berries. If desired reserve some of the nuts and berries to sprinkle on the top.
Pour the batter on top of your sliced bananas in the baking dish and spread it out to be level. Sprinkle the top with any reserved berries and walnuts.
Bake for about 25-35 minutes, or until set.
Let cool for a few minutes before serving plain or with more berries and maple syrup.

Notes
*To toast walnuts, place them on a baking dish in an oven heated to 375°F / 190°C for about 7 minutes.
*To make a flax egg, whisk 1 Tablespoon of ground flaxseed with 3 Tablespoons of water and let sit for five minutes until it becomes gelatinous, like an egg.

Oatmeal Apple Cinnamon Cookies (vegan and gluten free)

Makes 12-15 cookies

Quick and easy to make in a food processor, the cookie dough was ready to go into the preheated oven. They are chewy, moist and have excellent autumn flavors, cinnamon, apples and walnuts!  If you use gluten free oats, they’ll be a nice treat for those who can’t tolerate gluten.  

1 ¾ cup old fashioned rolled oats (175g)
¼ cup coconut sugar (47g)
1 cup walnuts (100 g)
½ cup raisins (70g) 
½ cup almond butter (125 g) You can substitute another nut butter, if you wish.
1 medium apple (170g), chopped
1/4 teaspoon salt  
1/4 teaspoon baking soda 
1 teaspoon baking powder 
1 teaspoon cinnamon 
1 teaspoon vanilla extract

Transfer all the ingredients to a food processor and process until it reaches a coarse consistency. Please note that the mixture will be very sticky right now but don’t worry it’s all good. Line a baking tray with parchment paper and scoop 2 tablespoon of the the mixture on the baking tray. Since the mixture is very sticky at this point, grease your hands with some oil or you can simply flatten it out evenly with a butter knife to 1/2 inch thickness. Preheat the oven to 350F and bake for about 18 minutes or so. The baking time also depends on the heat of your oven so adjust the baking time accordingly. Once baked let it cool and then transfer it on to a wire rack so that the cookies do not collect moisture at the bottom and to prevent it from getting soggy. The cookies are very delicate right after it's baked, so let it cool down completely before handling. Store the cookies in an air tight container to prevent it from drying out. These cookies also freezes well, you can make a back of it and freeze it for later - a grab and go breakfast. 

IMPORTANT TIPS:  The mixture is supposed to be sticky so grease your hands with some oil or you can simply flatten it out with a butter knife to 1/2 inch thickness - the baking time depends on the heat of your oven to adjust it accordingly if needed - use your judgement - some people are not very fond of raisins but it works very well for this recipe. Once the raisins are blended with the other ingredients you won’t notice it at all - the cookies are very delicate right after its baked so let it cool down completely before handling or storing it - Store the cookies in an air tight container to prevent it from drying out - these cookies also freezes well so you can make a batch and freeze it for later - a grab and go

Vegan Baked Oatmeal Cups (2 Flavors!) Soy Free Nut-Free Gluten Free

Full of whole grains and sweetened naturally with fruit, these two different flavors of Vegan Baked Oatmeal Cups are a healthy and fun way to start your morning! These delicious muffins are freezer friendly too.

Chunky Monkey Cups: (Makes 12) (264 calories; 9.6 g fat; 1 mg cholesterol; 12.4 g fiber; 4 g sugars; 8 g protein)

1 1/2 cups non-dairy milk
1 cup mashed banana
2 Tablespoons ground flaxseed 
2 teaspoons baking powder 
1 teaspoon cinnamon
1/2 teaspoon sea salt
3 cups old-fashioned rolled oats 
1/4 cup walnuts, chopped***
1/4 cup mini chocolate chips 

Cinnamon Roll Cups: (Makes 12) (314 calories; 7.6 g fat; 0 mg cholesterol; 16.5 fiber; 18.9 sugars; 7.6 g protein) 

1 1/2 cups non-dairy milk
1 cup unsweetened applesauce 
2 Tablespoons ground flaxseed 
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon sea salt
3 cups old-fashioned rolled oats 
1/4 cup almond butter***
2 Tablespoon coconut sugar
1 teaspoon cinnamon 

1. Preheat your oven to 350F/180C and grease a standard size muffin pan with cooking spray. Set it aside. (I used muffin cup liners and gave them a quick spray with oil.)

2. In a large mixing bowl, whisk together the almond milk, fruit puree, ground flaxseed, baking powder, cinnamon and salt until combined. 

3. Next, stir in the old-fashioned rolled oats. For the chunky monkey cups you’ll also fold in the chocolate chips and walnuts. 

4. If you’re making the cinnamon roll baked oatmeal cups, prepare the cinnamon swirl in a separate bowl by stirring together the almond butter, coconut sugar and cinnamon until smooth. 

5. Divide the batter equally among the muffin cups. 
******For the cinnamon roll oatmeal cups, fill each muffin cup half way up with the batter before adding a teaspoon of the cinnamon swirl “paste.” Use damp fingers to spread the paste out into an even layer before topping each cup with the remaining oatmeal batter.******

6. Bake the oatmeal cups for about 25 minutes or until set. Allow the cups to cool for 10 minutes in the pan before removing them to a wire rack to cool completely. 

***To make these cups nut free, omit the walnuts from the chunky monkey cups and use sunflower seed butter instead of almond butter in the cinnamon roll cups!

Copycat Oil Free Heavenly Hunks Oats (Vegan)

Here's a little treat to have in the afternoon with a spot of tea.  Make these on a day when you're doing other food prepping.  Then, you can check off your snack-making for the week.

Dry Ingredients
1 1/2 cups rolled oats 
1 cup oat flour 
1/3 cup almond flour 
1/2 cup coconut flakes 
Wet Ingredients
1/2 cup unsweetened applesauce 
1/2 cup maple syrup 
1/2 cup powdered peanut butter mixed with 1/4 cup water 
Mix-Ins
1/2 cup vegan chocolate chips and/or dried fruit (raisins, dried cranberries, etc.)

Line a 8" x8" baking pan with parchment paper. (Be sure to leave an overhang for easier lifting of the contents later.) Add the dry ingredients to a large mixing bowl. Mix well.  Add the wet ingredients. Stir until fully mixed. (If the mixture seems too dry, add a touch more melted coconut oil.) Fold in the chocolate chips. Pour mix into pan and use spatula to press down firmly into the pan until flat and even. Pop the pan into freeze. Leave the pan in the freezer for 8-10 hours or overnight. To remove from baking pan, run warm tap water over the bottom of the pan to loosen the edges of the batter. Then using the parchment, gently pull the mixture out of the dish. Use a chef knife to slice into 25 cubes. Run the knife under hot water before each slice to help cut the frozen hunks.
Place the frozen "hunks" in a freezer-safe container.  Store them in the freezer and remove the portions a few minutes before serving.

Strawberry Oatmeal Bars (Vegan)

We thought these strawberry oatmeal bars were delightful.  Of course, the husband loved having this seasonal treat.  These had just the right amount of sweet to them.  By using mashed banana and just a bit of maple syrup, the flavor of the berries really comes through. (I followed the original recipe to the letter, with this exception… I added about ½ teaspoon vanilla to the berry mixture and ¼ teaspoon almond extract plus ½ teaspoon sea salt to the dough mixture.)

Dough:

2 cups (205 g) oats 

1 cup (120 g) almond flour* 

1 cup (90 g) oat flour 

1 small (80 g) banana, mashed* 

1/4 cup (80 g) maple syrup or agave syrup

1/4 cup (60 g) canned coconut milk*

2 teaspoon baking powder

½ teaspoon sea salt

¼ teaspoon almond extract

Strawberry Filling:

3 cups (450 g) diced strawberries

1/3 cup (105 g) maple syrup or agave syrup

2-3 teaspoon fresh lime or lemon juice

5 teaspoon chia seeds

3 teaspoon cornstarch or potato starch 

½ teaspoon vanilla extract

Instructions:

(I highly recommend using a kitchen scale for this recipe and measuring the ingredients in grams.) 

Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius).

Put the ingredients for the strawberry filling in a saucepan, bring to a boil, let it simmer for 5-10 minutes, and stir occasionally.

Mix all ingredients for the dough in a bowl by either using your hands or a hand mixer.

Press 2/3 of the dough evenly into a greased or lined baking dish. The pan I used measured 7 x 11 inches (18 x 28 cm).

Pour the strawberry filling over the crust.  Crumble the remaining 1/3 dough on top.  Bake in the oven for 20-25 minutes. 

Notes:

*Banana: Use banana or applesauce for a low-fat version. If you prefer a flaky/buttery soft crust, I would recommend using 40 grams banana (or applesauce) and 40 grams vegan butter (margarine).

*Almond flour: You can use any ground nuts/seeds of choice (e.g. hazelnuts, shredded unsweetened coconut) instead of almond flour.

*Coconut milk: You could use oat cream or soy cream instead of canned coconut milk.

*Other reviewers said that the bars could be frozen for up to 3 months.  Other berries can be used.  Frozen strawberries/berries will work.

Chocolate Cherry Cake (Vegan & Gluten Free)

Oh!!  This cake!!!  It was beautiful and so delicious that everyone had a second piece!!  It looks quite fancy, but it was very easy to make.  You can make it a layer cake by doubling the ingredients.

Ingredients:
1¼ cup (133 g) quick-cooking oats, blended into a fine flour*
⅓ cup (27 g) cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
2 flax “eggs” (2 tbsp ground flax + 5 Tablespoons water)
1 cup unsweetened soy milk*
½ cup (130g) unsalted almond butter
½ cup (75g) coconut sugar
1 Tablespoon apple cider vinegar
½ teaspoon vanilla extract
½ teaspoon almond extract (optional)
(I added 2 teaspoons of espresso powder to the dry ingredients as suggested by one of the reviewers.)
For the Cherry Jam:
2 cups of pitted cherries (fresh or frozen) (I used frozen.)
2 Tablespoon maple syrup or coconut sugar
⅛ teaspoon almond extract (optional)
1 Tablespoon filtered water
For Serving:
1 cup coconut whipped cream* (I whipped 1 cup of Silk Dairy Free Heavy Whipping Cream Alternative and then added ¼ cup powdered sugar + 1 teaspoon vanilla.) 
Chopped and/or shaved chocolate (optional)

Instructions:
Preheat the oven to 350F and lightly grease or spray a 9” cake pan with a neutral cooking oil.
Prepare the Wet Ingredients: Mix the ground flax together with filtered water to create a flax “egg” in a small bowl. Combine the soy milk and apple cider vinegar in the base of a medium bowl – the vinegar will curdle the milk to create a “buttermilk”. Let both mixtures sit for at least 5 minutes, then add the thickened flax egg to the larger bowl with the almond butter, coconut sugar, vanilla, and almond extracts. Whisk until well-combined.
Mix the Dry Ingredients together in a separate, larger bowl. Form a well in the center of the mixture, pour in the wet ingredients, and use a spatula to mix everything together until no clumps remain. Pour the cake batter into the cake pan and bake on the middle rack for 20-22 minutes. (If you are baking multiple cakes, bake for 23-25 minutes).
Once cooked, remove the cake from the oven and let sit in the pan for 5 minutes before loosening the edges with a butter knife and flipping onto a baking rack to let cool completely.
Make the Cherry Compote: in the meantime, add all of the ingredients of the cherry compote to a large, nonstick pan. Bring the mixture to a simmer over medium-high heat, stirring occasionally. Let the cherries cook down for 15-20 minutes, stirring occasionally. Set the compote aside and let cool completely.
Assemble the Cake: top the cake with a layer of coconut cream, then spoon the cherry compote (and extra liquid) on top. Garnish with chopped and shaved chocolate, if desired. Serve immediately – leftovers will keep in the fridge for up to 5 days.

Notes: The recipe listed above makes one cake. If you would like to create a layered cake, double all of the ingredients (compote and cream included)
Nut Allergies: replace the almond butter with tahini or sunflower butter
Coconut Whipped Cream: If you don’t want to make it yourself you can replace it with store-bought coconut whipped topping or a vanilla frosting of your choice! You can also use a super-thick coconut yogurt for a completely sugar-free option.
Other Substitutions: Almond butter can be replaced with another nut or seed butter and coconut sugar can be replaced with brown sugar or another granulated sweetener. I do not recommend replacing the soy milk* as other plant milks do not create a good “buttermilk” due to lower protein content. This recipe has not been tested with any other flours.

Chocolate Cherry Overnight Oats

Makes 1 serving

This yummy breakfast is right up my alley.  Using a really ripe banana (lots of black spots on the peel) sweetens the oats.  Do yourself a favor and make a quadruple batch so that your breakfast will be set for four days!  

1/2 banana, mashed
1/2 cup old-fashions rolled oats
1/2 teaspoon ground cinnamon
1 Tablespoon flax meal or chia seeds (I used flax meal.)
1 Tablespoon cocoa powder
1/2 cup plant milk (I used unsweetened almond milk.)
1/2 cup water
1/2 cup frozen cherries

Add the mashed banana, the oats, cinnamon, flax meal, cocoa powder, plant milk and water to a 2 cup mason jar.  Put the lid on the jar and give the jar a really good shake.  Remove the lid and add frozen cherries.  Place the lid back on the jar and give it another shake.  Store in the fridge over night.  Enjoy cold in the morning (like I do) or put the contents in a microwave safe container and warm it up.

Stewed Apple Crisp Pots (Vegan and Gluten Free)

Well, this may seem un-American, but I would choose this apple dessert over an apple pie anytime! This is absolutely the most scrumptious dessert ever!  (Although it would be a close call between this dessert and my delish and unusual contest winning apple pie.) 
The beauty of it is that you can make all the components in advance. The stewed apple recipe is pretty straight forward.  I like that it is sweetened with maple syrup instead of white sugar.  Any granola would work here, but I always have Coconut Buckwheat Granola on hand.  It's my fave. But, let me tell you, the cashew cream is the BOMB!  It would take any fruit dessert to a heavenly level.  Be sure to make this for your favorite people.  It would make a fabulous holiday treat.

Stewed Apples
5 medium-sized sweet eating apples, skin on, cored and chunked
2 Tablespoons fresh lemon juice
2 Tablespoons maple syrup (not pancake syrup)
1 Tablespoon water
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
Pinch of sea salt

Place the stewed apple ingredients in a medium-sized pot and bring to a boil. Simmer the apples for about 15 minutes or until the apples become soft and "fluffy" and still hold their shape.  You don't want it to turn into applesauce.  Now, when I made this, my apples were quite juicy and so, when they were cooked to this point, they gave off a lot of juice.  I took some of that juice and put it in a small saucepan with 1 Tablespoon maple sugar and cooked it until it became syrupy.  Then I returned the syrup to the apple pan and tossed the apples until they were coated.   So, if your apples seem to be swimming in too much liquid, you can do the same.

Coconut-Buckwheat Granola
1 1/2 cups old-fashioned rolled oats (Use gluten-free oats to make this dessert gluten free.)
1/2 cup unsweetened flaked dried coconut
1/2 cup almonds, coarsely chopped
1/2 cup unsalted pumpkin seeds
1/4 cup uncooked buckwheat groats
1/2 teaspoon kosher salt or sea salt
1 teaspoon ground cinnamon 
2 Tablespoons canola oil or coconut oil
2 Tablespoons maple syrup 

Preheat the oven to 375F.  Combine the first 7 ingredients in a large bowl.  Whisk together the oi and maple syrup in another bowl.  Pour the wet ingredients into the dry ingredients and mix really well.  Spread the mixture in a single layer on a parchment lined or silicone lined rimmed baking sheet.  Bake for 10 minutes.  Stir the mixture and then bake an additional 10 minutes.  Cool completely before using.

Cashew Cream
3/4 cup cashews, soaked overnight in water
1/2 cup plant milk
2-3 Tablespoons maple syrup (not pancake syrup)
2 teaspoons vanilla extract

Drain the water from the soaked cashews.  Rinse the cashews with fresh water and drain again. Then place the cashews in a high speed blender along with the rest of the cashew cream ingredients. Process until very smooth.  Add more milk to your thickness preference.  I thought the thickness was perfect as is.  

Serving
To serve, layer the three components into glass dishes for a simple, but lovely-looking dessert.  I layered the apples first, then the cream and then the granola crisp.  Malin (the recipe author) layered hers with the cream first, then the apples, the cream again and then the granola crisp.  Either way, it's going to look and taste fabulous!

No-Bake Peanut Butter & Jelly Bars (Vegan)

Makes about 24 servings

These are tremendously easy to make and tremendously delicious to eat!  They look quite fancy.   These little treats would make a great make-ahead dessert for a party. 

1 packed cup soft Medjool dates, pitted
2 3/4 cup rolled oats (I use gluten free oats)
1/2 cup drippy peanut butter (no sugar added)
3 Tablespoons pure maple syrup
2 teaspoons pure vanilla extract
1/2 teaspoon sea salt
4-6 ounces raspberry or strawberry jam (or Homemade Chia Jam)

If the Medjool dates are not very soft, cover them with hot water for 5 minutes, then drain and pat dry.  
Place the oats in the bowl of the food processor and process until you have a fine oat flour.
Add the pitted dates, peanut butter, maple syrup, vanilla, and salt to the oat flour.  Pulse until the mixture forms into a sticky dough.  (If it feels too dry, add a spoon of plant-based milk or more maple syrup, a teaspoon at a time until the dough just sticks together when pressed.  If the dough is too sticky to handle, place the dough in the fridge for 20 minutes to firm up a bit.)
Line a 9” X 5” loaf pan with parchment paper, letting the excess hang over the long sides to form a sling.  Spread the dough into the pan and smooth with top out evenly, pressing all the way into the corners with your fingers.  Use a flat bottomed glass to get the mixture even on top.  Place the pan in the freezer for at least 30 minutes to set.
Warm up the jam in a saucepan or in the microwave to make it easy to spread.  Remove the dough from the freezer and spread the jam in an even layer over top.  Top with berries. Return to the freezer to set.  Then slice into bars or squares and serve.  Store leftovers in the freezer.
