Instant Pot Black Lentils

I'm liking black lentils. They are so filling and satisfying. And, look how lovely they are set off by the colorful veggies.  Eat them as is or add them to nourish bowls, a salad, or even soups for an extra boost of protein and fiber.

1 cup black lentils
1 ¾ cups water or vegetable broth
½ teaspoon salt
½ teaspoon black pepper

Rinse the black lentils well.  Drain and then put them in the Instant Pot.  Add the water (or broth), the salt and pepper.  Put the Instant Pot lid on and make sure the valve is set to Sealing. Press the Pressure Cook button and set the time to 5 minutes.  Allow for Natural Pressure Release for 15 minutes.  When the time is up and the pin has dropped, open the lid and give the lentils a gentle stir.  The lentils can be eaten right away and/or they can be stored in the fridge or freezer.  If using in a salad, be sure to rinse the cooked lentils first.

Lemon Banana Bread (vegan)

Makes one 9” x 5” loaf (12 slices)

We went on a double date with our friends, Susan and Bill.  Susan helps me when I teach my Plant Powered Plates class at Gilda’s Club of Louisville.  I call her my "Sue Chef."  After enjoying a pizza and a mocktail at a local restaurant, they invited us to see their beautiful home and have dessert.  This is what she made, along with a tasty berry compote. She packed up a generous slice for me to enjoy at breakfast the next day, which I did with Homemade Instant Pot Cashew Yogurt. Here is a link to a tasty compote I've made many times. 

1½ cups mashed bananas, equivalent to 3 large bananas
1½ cups all-purpose flour 
½ cup almond flour 
¼ cup lemon juice, about 2 medium lemons
2 teaspoons lemon zest
⅓ cup soft brown sugar 
2 teaspoons baking powder
½ teaspoon baking soda
⅓ cup mild-flavor olive oil 
1 teaspoon almond extract 
½ teaspoon salt
(Optional, but lovely)
Pinch of cinnamon
Pinch of ground cardamom
Pinch of nutmeg
Topping
⅓ cup sliced almonds (I used pecans because that’s what I had.)

Instructions
Preheat the oven** to 350 °F (180 °C). Line a 9-inch x 5-inch loaf pan with parchment paper. Slightly oil the paper with cooking spray.
Mash the bananas, pack them in a measuring cup to measure exactly 1 cup + 1/2 cup, and place them in a mixing bowl.
Stir in the light olive oil, lemon juice, lemon zest, soft brown sugar, and almond extract, until well combined.
Fold in the flour, almond flour, salt, baking powder, and baking soda, and use a rubber spatula to combine. It should form a thick, smooth batter.

Transfer the batter to the prepared loaf pan.
Sprinkle sliced almonds on top of the bread.

Bake the bread on the center rack for 45-55 minutes at 350 °F (180 °C). If the top of the bread darkens too fast, foil the pan after 30 minutes. Bake until a toothpick inserted in the center comes out clean.

Let the bread cool down in the pan for 10 minutes, then release and cool completely on a wire rack for about 2 hours before serving.


Notes: Swap the brown sugar for a refined sugar-free option like coconut sugar or unrefined cane sugar if desired. Do not swap for a liquid sweetener like maple syrup, the bread will turn gummy. Any low-flavor oil works or, you can use melted plant-based butter if preferred. 

Storage: Store the bread in an airtight container in the fridge up to 3 days.

*Oven Mode: This recipe calls for using the fan-forced (convection) mode. If you use conventional mode, increase the temperature by 25°F (15°C). The baking time should be the same, but it might take a few more minutes.

Really Good White Bean Soup (Vegan)

Serves 6-8

This hearty, rich, and thick white bean soup starts out with a short simmer on the stovetop and with a finish in the oven.  It will surprise you with its savory depth of flavor. Dried white beans, fresh herbs, miso, and braised garlic turn an ordinary bean soup into extraordinary. Scoop up with crusty bread for the ultimate cozy yet nourishing winter meal good enough for company! For Soaking
1 pound dried white beans, such as cannellini or great northern 
1½ Tablespoons kosher salt 
2 teaspoons baking soda

For Cooking
4½ Tablespoons extra-virgin olive oil, divided
1 large yellow onion, diced (~ 2 cups)
3 medium carrots, diced (1 to 1½ cup)
3 celery ribs, diced (~ 1 cup)
Kosher salt and freshly ground black pepper
½ to 1 teaspoon red pepper flakes (1 tsp for spicy)
6 to 7 cups water 
1 large or 2 small rosemary sprigs (or 8 to 10 thyme sprigs)
1 large or 2 small sage sprigs
2 bay leaves
2 teaspoons Better than Bouillon “no chicken” base 
2 medium heads of garlic
1 Tablespoon white miso

For Serving
1 handful of flat-leaf parsley chopped
Crusty bread 

Instructions
1. Soak the beans: Place dried beans in a large bowl and cover with 8 cups cold water. Add 1 ½ Tablespoons salt and 2 teaspoons baking soda. Cover and soak for 8 to 12 hours, or overnight. Drain and rinse well. 
2. When ready to cook, arrange a rack in the middle of the oven and preheat to 350ºF.
3. In a Dutch oven or large ovenproof soup pot with lid, heat 1½ Tablespoons olive oil over medium. Once hot, add the onions, carrots, and celery with a big pinch of salt. Cook, stirring occasionally, until softened, about 10 minutes. Add the red pepper flakes, if using, and stir frequently for 30 seconds.
4. Pour in 6 cups water, the drained beans, ½ tsp kosher salt, and lots of pepper. Partially cover and bring to a boil.
5. Meanwhile, make the Bouquet Garni: using kitchen twine, tie together the rosemary and sage sprigs plus bay leaves.
6. Once it comes to boil, add the 2 teaspoons Better than Bouillon and stir thoroughly to dissolve. Add the bouquet garni and submerge in the liquid. Boil uncovered for 10 minutes.
7. Meanwhile, prep the garlic: Trim the bottom roots and scrub away any dirt on the bottom. Slice off ~ ¼ inch from the top of each head to expose all of the cloves, as if roasting whole garlic. Peel away any loose paper outer layers of garlic.
8. Once the beans have boiled for 10 minutes, turn off the heat. Add in the garlic heads. Pour 2 Tablespoons olive oil on top of the garlic and beans. Cover the pan.
9. Bake in the oven until the beans are tender, 60 to 75 minutes (for small beans, like navy beans, check around 45 minutes.  (I used great northern beans and it took 70 minutes.)
10. Pick out the bouquet garni (discard) and garlic heads (keep these). Scoop a ladle of hot broth into a glass. Add 1 Tablespoon miso to the hot broth; whisk well until miso is completely dissolved. Pour miso broth into the soup and stir well.  If the soup is too thick for your liking, add ½ to 1 cup of freshly boiled water.
12. Once cool enough to touch, squeeze garlic cloves out of their skins and into the soup, stirring well. Discard the garlic skins. Garnish with chopped parsley, if using. 
13. Once cooled, store the soup in a storage container for up to 5 days in the fridge, or freeze for up to 6 months.

Easy Instant Pot Vegan Chili (using dried beans)

The easiest Instant Pot Vegetarian Chili ever! With dried beans, veggies, and chipotle peppers, this “dump and go” recipe skips the soaking and sautéing. You'll love this delicious, healthy, slightly smoky chili that tastes like it's been simmering all day. A crowd pleaser, perfect for busy weeknights or freezing. 

1 cup dried black beans, rinsed
¾ cup dried pinto beans, rinsed
1 large diced yellow onion (about 2 cups)
1 medium diced sweet potato, peeled or left unpeeled
1 diced red bell pepper
1 large diced carrot
3 cloves minced garlic
1 chipotle pepper, minced + 1 Tablespoon adobo sauce (reduce amount or omit if you’re sensitive to spicy foods)
3 Tablespoons tamari (or soy sauce)
2 Tablespoons tomato paste
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons ground coriander
3½ cups vegetable broth
1 (28 fl. oz.) can fire-roasted diced tomatoes 
2 cups frozen corn

Toppings (optional—avocado, scallions, tortilla chips, vegan cheese, or vegan yogurt)

Combine: In an Instant Pot, combine 1 cup dried black beans, ¾ cup dried pinto beans, 1 large diced yellow onion, 1 medium diced sweet potato, 1 diced red bell pepper, 1 large diced carrot, 3 cloves minced garlic, the chipotle with adobo sauce(if using), 3 Tablespoons tamari, 2 Tablespoons tomato paste, 2 teaspoons ground cumin, 2 teaspoons dried oregano, 2 teaspoons ground coriander, 3½ cups vegetable broth, and 1 (28 fl. oz.) can fire-roasted diced tomatoes Stir well to mix.

Pressure cook: Seal, adjust setting to “high pressure” and pressure cook for 45 minutes. Once done, allow a natural slow release.

Finish chili: Stir in 2 cups frozen corn. If you wish to thicken the chili, scoop out about 2 cups of the chili and transfer to the blender. Blend until the mixture breaks down (stop just before it’s a complete puree). Pour mixture back into Instant Pot and stir well to combine. Ladle into bowls and serve with toppings of your choice (optional.)

Banana Bread Baked Oatmeal (Vegan, gluten-free, nut free option)

Makes 6 generous servings

This scrumptious breakfast can be made in a jiffy using only the baking dish, so easy clean-up. Using spotty bananas will make the baked oatmeal especially sweet.  Serve this with a dollop of vegan yogurt and some fresh seasonal fruit for a lovely, tasty breakfast.

2 large ripe bananas, mash (The spottier the bananas, the sweeter the final result.)
1 1/3 cup (330ml) plant milk (I used unsweetened soy milk to bump up the protein.)
1/4 cup (60g) nut or seed butter (I used almond butter.)
4 Tablespoon maple syrup (You can also use agave syrup.)
1 teaspoon vanilla extract
2 cups (200g) old fashioned oatmeal (To make this gluten free, use gluten free oats.)
2 teaspoons baking powder
¼ -1/3 cup dark chocolate chips
Optional: ½ banana, sliced for decoration

Preheat the oven to 200C/400F. Use a baking dish.  (I used a 1½ quart 8” X 10” Corningware baking dish.) With a fork, mash the two large very ripe bananas right in the dish.  Stir in the nut/seed butter, the maple syrup, and the vanilla until well combined.  Slowly add the plant milk.  Stir until well combined.  
Add the oats, baking powder and the chocolate chips and stir well until everything is well incorporated. Decorate with some banana slices, if using.
Bake at 200C/400F for 30-35min and let it cool a few minutes before serving or storing.  Store in the refrigerator or the freezer.

Nut Butter Banana Breakfast Muffins (Vegan)

Makes 11-12 standard size muffins

These tender, fluffy muffins are perfect to prep ahead and keep in the freezer for a quick breakfast or snack. I did use a scale to make these instead of using measuring cups.  
The original recipe said it yielded 8 muffins, but I think she used a jumbo sized muffin tin.  I was able to make 11 muffins in a standard muffin tin.  I did fill the muffin tins a bit over the top, so I’m thinking if you filled the tins to the rim, you could get a dozen lovely muffins.  The original recipe called for peanut butter, but I had a partial jar of almond butter and a partial jar of cashew butter and wanted to use them up.  I’m thinking that if you can’t have nuts, you could use seed butter as well, such as sunflower seed butter or even tahini. I used some spelt flour along with all-purpose flour to make these a bit more healthful. I will definitely make them on repeat!

Ingredients:
3 large bananas, mashed (My bananas were huge, so I used 2½ huge bananas.)
2 Tablespoons flax meal 
2 Tablespoons water
90g nut butter (I used a mixture of cashew and almond butter.)
70g maple syrup
1 teaspoon vanilla extract
200g flour, or a mix of oat flour & flour (I used 100 g spelt flour + 100 g all-purpose flour.)
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of kosher salt
½ cup dark chocolate chips, plus more for optional topping
Toppings: rolled oats, dark chocolate chips, optional

Instructions:
Preheat the oven to 180°C/360°F.  Line a standard muffin tin with paper liners.  (You can use oil spray if you wish.)
In a small bowl, mix the flax meal and the water and set aside. (This will become thick and will serve as the “egg.”)
Measure the flour(s), the baking soda, baking powder, and salt in a medium bowl.  Whisk until blended well.
Mash the bananas on a dinner plate and set aside.
In a large bowl, measure out the nut butter, maple syrup, and vanilla.  Add in the mashed bananas and the flax meal “egg.”  Stir well until all the wet ingredients are well mixed.
Add the dry ingredients to the wet ingredients and stir just until combined.  Gently stir in the chocolate chips.  
Scoop the batter into the muffin lined tin.  Top each muffin with a sprinkle of dry oats (I used quick oats.) and a few dark chocolate chips for garnish, if you wish.
Bake at 180°C/360°F for 25 minutes.  
Allow the muffins to cool just a bit before serving right away. 
They should cool completely before storing or freezing.
For a full meal, serve with yogurt, fresh seasonal fruit and/or berries and seeds.

Lemon Poppy Seed Baked Oatmeal (Vegan)

Makes 4 servings

If you enjoy lemon and poppy seed muffins, you will like this Lemon Poppy Seed Baked Oatmeal breakfast.  The recipe is perfect for food prep day at your house. Once cooled, the servings can be placed in a container and refrigerated or kept frozen. I popped mine in the microwave, served it with some Homemade Instant Pot Cashew Yogurt and frozen blueberries that I heated up a bit.  To save time later, buy a bag of lemons on sale and then zest and juice them all at once.  Put the zest and lemon juice (separately) in an ice cube tray and freeze.  Once frozen, pop them out and place them in airtight containers in the freezer. Thaw when ready to use in recipes like this or when you wish to make salad dressings, sauces or soups.  

1 cup non-dairy milk such as almond, oat, soy or light coconut (I used unsweetened soy milk.)

1 Tablespoon lemon juice

1½ cups old fashioned oats

1 teaspoon baking powder

1/8 teaspoon salt

2 teaspoons chia seeds

1 Tablespoon poppy seeds

1 Tablespoon shredded coconut

¼ cup applesauce or mashed banana

3 Tablespoon maple syrup

½ teaspoon vanilla extract 

Preheat the oven to 350F.

In a medium bowl, measure in the milk and the lemon juice.  Stir a bit and then set aside to “curdle” like buttermilk.  

In a large bowl, add the oats, baking powder, salt, chia seeds, poppy seeds and coconut and mix well.  

Add the applesauce, the maple syrup and vanilla to the milk/lemon juice mixture. Stir well and then add that to the dry ingredients.  

Allow the batter to set for about 10 minutes so that the oats absorb the liquid.  

Pour the batter into a 8” X 8”, 9” X 9”, 7” X 11” or similar baking dish that has been sprayed with cooking oil or lined with parchment paper.

Bake at 350F (180C) for 35 to 40 minutes or until golden on the edges. Let it cool on a rack for 10 minutes.   

Slice and serve with maple syrup or whipped coconut cream or yogurt and fruits or berries. You can also top with some nuts or seeds of choice.

Toffee Banana Breakfast Bread (Vegan)

I just love breakfast and my day is made when I eat a really good one.  I saw this on Julie Maiten’s YouTube channel (one of my faves) and she said she found the recipe on Instagram.  So I gave it a try.  Though it looks decadent, it’s wholesome, filling and very satisfying with a hot cup of Joe.  It’s sweetened not with sugar, but with dates and bananas. To gild the lily, just top it off with yogurt and drizzle with mixture of tahini and maple syrup.  Sprinkle on some toasted pecans for a lovely crunch. This one is a new breakfast for us all to have on repeat.

Ingredients for the Bread:
5 pitted medjool dates
Scant 2 cups (320g) mashed very ripe banana (about 2 large bananas)
¼ cup (80g) vegan yogurt (I used Homemade Instant Pot Cashew Yogurt.)
1 teaspoon vanilla extract
1/3 cup (80 ml) milk of choice (I used soy milk.)
(180g) whole wheat flour
¾ cup (80g) old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
2 Tablespoon ground flax seed
3 teaspoons ground cinnamon
Pinch of kosher salt 

Topping Ingredients for Two Slices:
Vegan Yogurt (I used Homemade Instant Pot Cashew Yogurt.)
1 Tablespoon tahini
½ Tablespoon maple syrup
Splash of plant milk, to thin, if needed
Toasted pecans* or other nuts, roughly chopped

Preheat the oven to 350F.  Line a 9” X 5” loaf pan with parchment paper.  Set aside.
Soak the dates in hot water for 10 minutes/until soft. 
Add the milk, vanilla, yogurt and bananas to a high speed blend.  Add the pitted, soaked and drained dates.  Blend until smooth. Set aside.
Measure the flour, oats, soda, powder, flax meal, cinnamon, and salt into a large bowl.  Whisk until completely mixed.
Add the date milk mixture to the dry mixture.  Stir just until combined.  Do not over mix.
Put the batter into the lined loaf pan.  
Bake for 45-60 mins at 350F (180C) or until nice and golden on the top. Wait until the loaf is completely cool before cutting. Cut into 8 to 10 slices.
You can freeze the sliced loaf with baking paper between each slice.  Reheat in a toaster, oven or microwave. 



*To toast pecans in the oven, preheat the oven to 350°F (180C), spread the pecans evenly on a baking sheet, and bake for 5-8 minutes, stirring halfway through, until they become fragrant and slightly darker brown in color; be sure to watch them closely as they can burn quickly.

Hearty Skillet Cornbread (vegan)

This is no ordinary cornbread.  The flavor is fantastic.  The texture is more moist, almost casserole-like.  In fact, I was planning to serve it with soup like regular cornbread, but it was so substantial that I served it along with beans, a salad and fruit.  To us, it seemed more like a side dish, than a “bread.”  I will definitely make this again!!

For the Mix-Ins:
1 cup finely chopped zucchini
1 cup Soyrizo
1 cup corn kernels
½ cup diced roasted red pepper
½ cup diced yellow onion

For the Cornbread Batter:
1 cup yellow cornmeal
1 cup all-purpose flour (or gluten-free all-purpose flour for a gluten free diet)
2 Tablespoons ground flaxseed
1 ½ teaspoon baking powder
1 cup unsweetened nondairy milk
6 Tablespoons melted coconut oil
1/3 cup water
¼ cup (or a bit less) agave nectar or maple syrup
2 Tablespoons chopped fresh cilantro (optional)

To Prepare the Mix-Ins:
Preheat the oven to 375F.  Heat an 8 or 9 inch cast iron skillet over medium-high heat.  Add the zucchini, Soyrizo, corn, red pepper and the yellow onions.  Sauté for 5 minutes, stirring occasionally.  Set aside.

To Prepare the Cornbread Batter:
In a large mixing bowl, whisk together the cornmeal, flour, flax meal, salt, and baking powder until evenly combined.  Make a well in the middle of the dry ingredients and pour in the nondairy milk, coconut oil, water, and agave nectar (or maple syrup).  Fold the batter together until well mixed, with no dry spots.
Next, take the skillet off the heat and pour the batter over the sauteed. mix-ins.  Fold together a few times, then place the skillet in the hot oven and bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.  Cool the skillet on a rack for at least 10 minutes before cutting it.  Sprinkle the top with the cilantro, if using.

Instant Pot Bean Soup (vegan and gluten free)

Makes 6 servings

This healthy Instant Pot Bean Soup is made with navy beans, fresh veggies, Italian seasoning, and lemon. The flavors are bright and delicious. You won’t even need to soak the beans. Serve this delicious soup with some garlic toast and fresh seasonal fruit for a perfect meal.

Ingredients

¼ cup extra-virgin olive oil (Use less oil or water sauté if you wish.)

1 large yellow onion, diced (2 cups)

6 cloves garlic, minced

2 Tablespoons Italian seasoning

¼ teaspoon red pepper flakes

1 teaspoon fine sea salt

2 carrots, diced

2 ribs celery, diced

1 medium yellow potato, diced (1½ cups)

1 cup dried navy beans* (not soaked)

⅔ cup chopped roasted red peppers (2 peppers, from a jar)

6 cups vegetable broth

4 cups fresh baby spinach

1 Tablespoon fresh lemon juice

Sauté onions: Add olive oil and onions to an Instant Pot. Turn on the sauté setting for 10 minutes, and cook, stirring only occasionally, to allow the onions to brown around the edges.

Add aromatics: Add the garlic, Italian seasoning, red pepper flakes, and salt. Sauté for 1 more minute, or until garlic is fragrant.

Pressure cook: Add carrots, celery, potato, beans, roasted red peppers, and vegetable stock. Stir well to mix. Pressure cook on high for 30 minutes. Allow the Instant Pot to natural release for 15 minutes, then release all pressure.

Finish seasoning: Stir in spinach and lemon juice. Taste and adjust seasonings (more salt and/or lemon juice, if needed). Ladle into bowls.

*Bean Option: Use dried, unsoaked navy beans for this recipe. You could instead substitute an equal amount of dried cannellini beans. If using dried cannellini beans, increase the cook time in step 3 to 35 minutes (high pressure), and continue with the same 15 minute natural pressure release afterwards.

A note on bean cooking time:  The original recipe stated 25 minutes with a 15 minute Natural Pressure Release, however, when I pressure cooked the soup for that length of time, the beans were still too hard.  So, I added 5 more minutes.  

Storage tips: This soup can be stored in the fridge for 3 to 4 days, or transfer cooled soup to a freezer-safe container and freeze for longer storage.

**Garlic Toast: Lay slices of whole-grain bread on a cookie sheet.  Drizzle with a bit of olive oil.  Place the cookie sheet under the broiler.  Broil the bread until it’s toasty brown. Take the cookie sheet out of the oven and rub the raw garlic over the surface of the toast. Sprinkle with kosher salt (or sea salt) and freshly ground black pepper.  Flip the toast over to the other side and repeat the process.

Black Bean Quinoa Casserole

This vegetarian casserole combines Mexican-inspired flavors with healthful ingredients like quinoa and black beans. No dicing or chopping required! My oven is a little hinky, so I added more time to the baking.  The original recipe mentions “slices”, but mine never firmed up enough for slices.  I just let the casserole cool for about 10 minutes and then dipped out the servings.  

1 cup uncooked quinoa
1¼ cups vegetable broth
10 ounce can diced tomatoes and green chiles
10 ounce can red enchilada sauce
15 ounce can black beans, drained and rinsed
1 cup frozen or fresh sweet corn
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
1½ cups Mexican blend shredded cheese (Use dairy free cheese if desired to make this vegan.)
Optional garnish toppings: avocado or guacamole, salsa, diced jalapeno, cilantro, lime, scallions

Preheat the oven to 375F. Lightly oil a 9x13 baking dish. Rinse quinoa in a fine mesh sieve until the water runs clear. Heat the vegetable broth until simmering.
Combine all ingredients, except for the cheese and garnishes, in the 9x13 baking dish. Stir to combine.
Cover tightly with foil. Bake at 375F for 35 minutes on the middle oven rack. Remove the foil and stir. The quinoa should be cooked through but the casserole will still be liquidy.
Bake for 15-20 minutes, or until the quinoa is firm and the excess liquid evaporates.
Top with the shredded cheese and return to the oven for 5 minutes, until the cheese is melted and bubbly.
Remove from oven and let set for 10 minutes before serving. Serve along with avocado or guacamole, lime wedges, fresh cilantro, scallions and salsa, if desired.

Notes:
Mexican blend cheese: Usually includes Sharp Cheddar, Colby Jack and Monterey Jack. Any of these three cheese can be used in place of a cheese blend. Use vegan cheese to make dairy-free.
Substitutions:  You can use taco seasoning in place of the individual spices. I couldn’t find tomatoes with green chilis, so I used one can of tomatoes and one can of green chilis.
Storage and reheating: Let cool to room temp, then cover the baking dish with foil or a lid. Keep refrigerated for 3-4 days for best quality. Reheat individual portions in the microwave. Reheat the entire casserole in the oven at 325 degrees F for 10-15 minutes, or until the cheese is melted.
Freeze for later: Let cool completely. Transfer individual portions into freezer safe containers or cover the casserole dish tightly. Freeze for up to 3 months. Let thaw completely in the fridge before reheating. 
Additions:  Feel free to add other veggies (zucchini, bell peppers, etc.) to this dish.  You can substitute other beans such as pinto beans or kidney beans.  You can add extra protein by including Soyrizo or vegan tempeh taco meat.

Oatmeal Apple Cinnamon Cookies (vegan and gluten free)

Makes 12-15 cookies

Quick and easy to make in a food processor, the cookie dough was ready to go into the preheated oven. They are chewy, moist and have excellent autumn flavors, cinnamon, apples and walnuts!  If you use gluten free oats, they’ll be a nice treat for those who can’t tolerate gluten.  

1 ¾ cup old fashioned rolled oats (175g)
¼ cup coconut sugar (47g)
1 cup walnuts (100 g)
½ cup raisins (70g) 
½ cup almond butter (125 g) You can substitute another nut butter, if you wish.
1 medium apple (170g), chopped
1/4 teaspoon salt  
1/4 teaspoon baking soda 
1 teaspoon baking powder 
1 teaspoon cinnamon 
1 teaspoon vanilla extract

Transfer all the ingredients to a food processor and process until it reaches a coarse consistency. Please note that the mixture will be very sticky right now but don’t worry it’s all good. Line a baking tray with parchment paper and scoop 2 tablespoon of the the mixture on the baking tray. Since the mixture is very sticky at this point, grease your hands with some oil or you can simply flatten it out evenly with a butter knife to 1/2 inch thickness. Preheat the oven to 350F and bake for about 18 minutes or so. The baking time also depends on the heat of your oven so adjust the baking time accordingly. Once baked let it cool and then transfer it on to a wire rack so that the cookies do not collect moisture at the bottom and to prevent it from getting soggy. The cookies are very delicate right after it's baked, so let it cool down completely before handling. Store the cookies in an air tight container to prevent it from drying out. These cookies also freezes well, you can make a back of it and freeze it for later - a grab and go breakfast. 

IMPORTANT TIPS:  The mixture is supposed to be sticky so grease your hands with some oil or you can simply flatten it out with a butter knife to 1/2 inch thickness - the baking time depends on the heat of your oven to adjust it accordingly if needed - use your judgement - some people are not very fond of raisins but it works very well for this recipe. Once the raisins are blended with the other ingredients you won’t notice it at all - the cookies are very delicate right after its baked so let it cool down completely before handling or storing it - Store the cookies in an air tight container to prevent it from drying out - these cookies also freezes well so you can make a batch and freeze it for later - a grab and go

Vegan Baked Oatmeal Cups (2 Flavors!) Soy Free Nut-Free Gluten Free

Full of whole grains and sweetened naturally with fruit, these two different flavors of Vegan Baked Oatmeal Cups are a healthy and fun way to start your morning! These delicious muffins are freezer friendly too.

Chunky Monkey Cups: (Makes 12) (264 calories; 9.6 g fat; 1 mg cholesterol; 12.4 g fiber; 4 g sugars; 8 g protein)

1 1/2 cups non-dairy milk
1 cup mashed banana
2 Tablespoons ground flaxseed 
2 teaspoons baking powder 
1 teaspoon cinnamon
1/2 teaspoon sea salt
3 cups old-fashioned rolled oats 
1/4 cup walnuts, chopped***
1/4 cup mini chocolate chips 

Cinnamon Roll Cups: (Makes 12) (314 calories; 7.6 g fat; 0 mg cholesterol; 16.5 fiber; 18.9 sugars; 7.6 g protein) 

1 1/2 cups non-dairy milk
1 cup unsweetened applesauce 
2 Tablespoons ground flaxseed 
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon sea salt
3 cups old-fashioned rolled oats 
1/4 cup almond butter***
2 Tablespoon coconut sugar
1 teaspoon cinnamon 

1. Preheat your oven to 350F/180C and grease a standard size muffin pan with cooking spray. Set it aside. (I used muffin cup liners and gave them a quick spray with oil.)

2. In a large mixing bowl, whisk together the almond milk, fruit puree, ground flaxseed, baking powder, cinnamon and salt until combined. 

3. Next, stir in the old-fashioned rolled oats. For the chunky monkey cups you’ll also fold in the chocolate chips and walnuts. 

4. If you’re making the cinnamon roll baked oatmeal cups, prepare the cinnamon swirl in a separate bowl by stirring together the almond butter, coconut sugar and cinnamon until smooth. 

5. Divide the batter equally among the muffin cups. 
******For the cinnamon roll oatmeal cups, fill each muffin cup half way up with the batter before adding a teaspoon of the cinnamon swirl “paste.” Use damp fingers to spread the paste out into an even layer before topping each cup with the remaining oatmeal batter.******

6. Bake the oatmeal cups for about 25 minutes or until set. Allow the cups to cool for 10 minutes in the pan before removing them to a wire rack to cool completely. 

***To make these cups nut free, omit the walnuts from the chunky monkey cups and use sunflower seed butter instead of almond butter in the cinnamon roll cups!

Chickpea Energy Bites (vegan, gluten-free, nut-free, refined sugar-free)

Makes about 25 bites

These little treats are very simple to make and they taste quite good.  They’re fancy looking enough to serve at a party or to give as a little gift.  You will need a food processor to prepare these.  It also helps to have an ice cream scoop for forming uniform balls, but it’s not necessary.

1 cup fresh dates, pitted
1 can chickpeas, drained and rinsed
½ cup old-fashioned rolled oats
½ - ¾ cup shredded coconut
4 Tablespoons cocoa powder
½ teaspoon ground cinnamon
2 pinches sea salt
3 Tablespoons (or more) brewed coffee
200 grams melted dark chocolate (I added 1 teaspoon coconut oil to the chocolate and used a double boiler for melting.)
Sea flakes, for decorating (optional)
Shredded coconut, for decorating (optional)

Soak the pitted dates in boiling hot water for at least 10 minutes. This will soften them up and make them easy to process.
Add the chickpeas, rolled oats, shredded coconut, raw cacao powder, brewed coffee, sea salt and cinnamon (optional) to a food processor.
Drain the water from the dates and rinse them a little bit in cold water.
Add the dates to the food processor.
Process all the ingredients into a dough. Scrape the sides of the processor bowl with a spatula to make sure all ingredients are evenly distributed throughout the dough.  If the dough doesn’t come together in a ball, add more coffee a tablespoon at a time until the dough comes together.
Place a piece of parchment paper on a plate or cutting board. Using an ice cream scoop, scoop the dough onto the parchment lined platter. With damp hands, roll into balls and place them back onto the parchment paper. Let sit in the fridge for 15 minutes or more.
Meanwhile, melt the dark chocolate, preferably over a water bath (microwave is also fine). Dip the bites into the melted chocolate and place them back on the parchment paper. 
Optional: Sprinkle sea salt or shredded coconut on top before the chocolate hardens.
Place the bites back into the fridge until the chocolate hardens fully before serving.
Store in the fridge for up to 3-4 days, or for longer in the freezer (just make sure to take them out of the freezer to thaw to room temperature about 30 minutes or so before eating.)

Vegan Zucchini Bread

Makes 10 slices from a 9”X5” loaf pan

Easy vegan zucchini bread with applesauce and whole wheat flour. 

2  flax eggs  (2 Tablespoons flaxseed meal + 5 tablespoons water; if you do not need the zucchini bread to be vegan, you can substitute 2 large eggs)
2 cups shredded unpeeled zucchini (about 2 small zucchini)
1/2 cup pure maple syrup
1/3 cup unsweetened applesauce
1/4 cup melted and cooled coconut oil
2 teaspoons pure vanilla extract  
1 1/2 teaspoons ground cinnamon  
1/2 teaspoon baking soda
1/2 teaspoon baking powder 
1/2 teaspoon kosher salt
2 cups  white whole wheat flour (I used 1 cup all-purpose + 1 cup whole wheat)
1/2 cup toasted raw walnuts or pecans roughly chopped (optional) OR 1/3 cup dark chocolate chips (dairy-free if needed), plus optional extra to sprinkle over the top

Place a rack in the center of your oven and preheat to 325 degrees F. Lightly grease a 9×5-inch loaf pan with nonstick spray, and line with parchment paper. Allow the two opposite sides of the parchment to overhang the edges of the pan (like handles). Grease again.
Make the flax eggs by stirring together the flaxseed meal and water. Let sit for at least 5 minutes to thicken.
Grate and measure the zucchini, then thoroughly squeeze it with a paper towel to remove as much excess water as possible. Repeat as needed so that the zucchini is as dry as possible.
In a large mixing bowl, measure out the dry ingredients (flour, cinnamon, salt, soda, baking powder) and whisk together to combine.  Add the shredded zucchini and toss to coat the zucchini.  Set aside.
In a medium mixing bowl, briskly whisk together the maple syrup, applesauce, coconut oil, and vanilla extract until smooth. If the coconut oil resolidifies, gently warm it in the microwave for 10-20 seconds, then stir until smooth. Add the flax eggs. Then mix again until combined.
Add the wet ingredients to the dry ingredients and stir just until the flour disappears. Fold in the nuts.
Scrape the batter into the prepared pan and smooth the top. If you'd like, you can also sprinkle a few extra nuts over the top.
Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for at least 20 additional minutes. Use the parchment handles to lift the loaf from the pan and onto a cutting board. Slice with a sharp serrated knife. 

Notes: 
Make sure to use a 9X5-inch pan, not an 8x4-inch loaf pan or the zucchini bread will not bake through properly.
Store for 2 to 3 days at room temperature. For longer storage, place in the refrigerator for 5 to 7 days. Freeze for up to 3 months. I also like to slice the whole loaf, then wrap and freeze individual slices. Then I can pull them out of the freezer whenever a craving strikes.
For a gluten-free version, replace the white whole wheat flour with the same amount of a 1:1 Gluten Free Baking Blend.

Authentic Vegan Black Eyed Peas (Vegan; Oil-Free and Instant Pot Option)

I tried this recipe for our New Year's Day dinner, but these turned out so well that I will definitely make them throughout the year.  Because I only had ½ pound of dried black-eyed peas in the cupboard, I actually halved this recipe and used the Instant Pot Mini. The black-eyed peas turned out perfectly.  The recipe below is the original recipe, using 1 pound of beans.  If you decide not to halve the recipe and you wish to use the Instant Pot, be sure to use a 6 quart Instant Pot.

1/4 cup oil** (I made this without oil.  I just added a bit of water to the hot pot and sauteed the veggies.)
1 medium yellow onion diced
1 large red bell pepper diced
1 jalapeño pepper seeded and diced (optional)
1 cup diced celery
3 garlic cloves minced
1 pound dried black eyed peas sorted, rinsed, and soaked for 8 hours
6 cups veggie broth OR 6 cups water plus 6 teaspoons of vegetable bouillon paste, OR 6 cups water plus 2 veggie bouillon cubes
1 large bay leaf
1 tsp dried thyme and/or oregano optional
2 tsp smoked paprika
1 tbsp liquid smoke
1 tbsp soy sauce (Use tamari to make this gluten-free.)
1 tsp freshly ground black pepper
1/2 tsp cayenne pepper

Instant Pot Instructions

Set the Instant Pot to sauté on medium heat and add the oil. (I used water to sauté the veggies.) When the oil is hot, add the onion, bell pepper, jalapeño, celery, and garlic and sauté until the onion is translucent, about 3 minutes.  Add the soaked black-eyed peas, only enough veggie broth to cover the beans about 1 centimeter, and bay leaf.  Place the lid on the Instant Pot and lock in place.  Cancel the sauté and set the Instant Pot to pressure cook on high for 10 minutes. If you are using un-soaked beans (which is acceptable using the Instant Pot) pressure cook for 35 minutes.  Let the Instant Pot natural pressure release for 5 minutes, then vent fully and turn off the machine.  Carefully remove the top of the pot and stir in the smoked paprika, liquid smoke, soy sauce, pepper, and cayenne.  Remove from the heat and let the beans cool a bit before serving with collard greens and rice or cornbread.

Stovetop Instructions

In a large Dutch oven, heat the oil over medium-high heat.  Add the onion, bell pepper, jalapeño, celery, and garlic and sauté until the onion is translucent, about 3 minutes.  Add the black-eyed peas, veggie broth, and bay leaf.  Cover and bring to a light boil. Reduce the heat to medium-low and simmer for about 40 minutes, or until the beans are tender and the broth has thickened.

Stir in the smoked paprika, liquid smoke, soy sauce, pepper, and cayenne.  Remove from the heat and let the beans cool a bit.  Serve with collard greens and rice or cornbread.

NOTES:  These vegan black eyed peas make the best leftovers! They’re even tastier and creamier on day 2 and 3. They should keep fresh in the refrigerator for up to 5 days. Reheat your beans in a pot on the stove, or in the microwave.  Black-eyed peas freeze well. Store them in a freezer safe container for up to 3 months.

Copycat Oil Free Heavenly Hunks Oats (Vegan)

Here's a little treat to have in the afternoon with a spot of tea.  Make these on a day when you're doing other food prepping.  Then, you can check off your snack-making for the week.

Dry Ingredients
1 1/2 cups rolled oats 
1 cup oat flour 
1/3 cup almond flour 
1/2 cup coconut flakes 
Wet Ingredients
1/2 cup unsweetened applesauce 
1/2 cup maple syrup 
1/2 cup powdered peanut butter mixed with 1/4 cup water 
Mix-Ins
1/2 cup vegan chocolate chips and/or dried fruit (raisins, dried cranberries, etc.)

Line a 8" x8" baking pan with parchment paper. (Be sure to leave an overhang for easier lifting of the contents later.) Add the dry ingredients to a large mixing bowl. Mix well.  Add the wet ingredients. Stir until fully mixed. (If the mixture seems too dry, add a touch more melted coconut oil.) Fold in the chocolate chips. Pour mix into pan and use spatula to press down firmly into the pan until flat and even. Pop the pan into freeze. Leave the pan in the freezer for 8-10 hours or overnight. To remove from baking pan, run warm tap water over the bottom of the pan to loosen the edges of the batter. Then using the parchment, gently pull the mixture out of the dish. Use a chef knife to slice into 25 cubes. Run the knife under hot water before each slice to help cut the frozen hunks.
Place the frozen "hunks" in a freezer-safe container.  Store them in the freezer and remove the portions a few minutes before serving.

Serves 6

Kabocha squashes are turning up at the grocery stores and I couldn’t help myself, even though it’s still summery outdoors.  But what a treat this was!  Good enough for company, as I like to say.  This was full of flavor and definitely comforting, so perfect for autumn/winter time.  And, it freezes well.  Rainbow Plant Life comes through again.  All of the recipes I’ve tried from Nisha’s YouTube channel/blog have been excellent.

Ingredients

1 medium kabocha squash

½ -1 cup water (or vegetable broth)

1-1½ Tablespoons coconut oil* (or oil of choice)

1 large yellow onion, diced

2 medium carrots, peeled and diced

Kosher salt or sea salt to taste

Black pepper to taste

4 cloves garlic, minced

2- inch piece ginger, grated or finely minced

1-2 Thai bird’s eye chili peppers, thinly sliced* (optional)

¼ cup red curry paste (use less to make it less spicy) (I used 1/8 cup.)

1 (13.5 ounce) can “lite” or reduced-fat coconut milk (I used full fat coconut milk because that’s what I had on hand.)

1 Tablespoon maple syrup, agave nectar, or coconut sugar

1 Tablespoon reduced sodium tamari** (gluten-free soy sauce)

1 Tablespoon white or yellow miso paste*** (optional but recommended)

1 teaspoon ground turmeric

2 (15 ounce) cans chickpeas (rinsed and drained) or about 3 cups cooked chickpeas

1-2 Tablespoons freshly squeezed lime juice

½ cup fresh cilantro, roughly chopped

For serving: white or brown rice or grains of choice

Instructions

Preheat the oven to 400°F (205°C) and line a sheet pan with parchment paper for easy cleanup.

Use a large, sharp knife to slice the kabocha squash in half. Once sliced in half, use a spoon to scoop out the seeds. Lightly brush each squash half with a bit of oil (coconut oil or avocado oil) and sprinkle with salt and pepper.

Place the squash halves, flesh side down, on the sheet pan. Roast for 40-45 minutes until the flesh is very tender. If your squash is large, bake for an additional 10 minutes.

Once it’s cool enough to handle, use a spoon to scoop the flesh out of the skin, and discard the skin. Place the kabocha squash flesh in a blender and add ½ cup water (or vegetable broth) and puree until very smooth. You should end up with approximately 3 cups of liquid. (I added 1 cup of veggie broth to make it less thick.)

While the kabocha squash is roasting, prepare the rest of the ingredients. Chop the onions, carrots, garlic, ginger, and chile peppers, and measure out the spices and other ingredients.

Heat a Dutch oven or a large nonstick saucepan over medium-high heat. Add the coconut oil, and once it’s shimmering, add the onions and carrots along with a pinch of salt and pepper. Cook the vegetables for 7-8 min, or until they are very tender and lightly browned.

Add the garlic, ginger, chile peppers (if using) and the red curry paste. Cook for 2 minutes, stirring to coat the vegetables in the aromatics. If you aren’t using a nonstick skillet, you may need to add a tablespoon of water to prevent the mixture from drying out and burning.

Pour the pureed kabocha squash sauce into the pan, then add the lite coconut milk, tamari, miso paste (if using), maple syrup, and turmeric, and black pepper to taste. Stir or whisk until the mixture is smooth and creamy.

Add the canned chickpeas and stir to combine. Bring the mixture to a simmer and cook for 15-20 minutes, or until the curry has become thick and creamy, and the veggies are fully softened.
