Simple Baked Oatmeal

Here’s a delicious and easy-to-make wholesome breakfast.  To make this even more convenient, begin prepping the night before.  Mix together the wet ingredients in one bowl and the dry ingredients in another bowl. Store this in the fridge overnight.  The next morning, mix the wet and dry ingredients together, add the fruit and nuts and then pop it in the oven.  Take your morning shower and get dressed.  When you are ready, your oatmeal will be too.  Allow it to cool a bit before cutting, maybe while brew some coffee and pack your lunch. Save the extra squares for another day to eat on the go. (These will freeze nicely too.)

Mix:
1 ¾ cups milk (any kind)
¼ cup real maple syrup (not pancake syrup)
2 large eggs
1 teaspoon real vanilla extract

Add:
2 cups old fashioned rolled oats
1 teaspoon baking powder
2 teaspoons cinnamon

Optional Add-Ins:
1 cup blueberries, mashed bananas, shredded apples, or other fruit
1/3 cup nuts, dark chocolate chips, and/or coconut

Stir until well combined.  Pour into an 8”X8” baking pan that has been sprayed with cooking oil spray.  Bake at 350F for 35 to 40 minutes.

Cool a bit so that it firms up before cutting into squares and serving.


**Gluten-Free: If you are eating a gluten free diet; make sure you are using certified gluten free oats and baking powder.

***The nutritional label below is for 1 of 8 "bars."  I used unsweetened almond milk and for the optional add-ins, I used 1 mashed banana and 1/3 cup bittersweet chocolate chips.

Simple Baked Oatmeal is so versatile.  Eat it just after it cools from baking,
pack some in a container to keep in the fridge for a grab-and-go breakfast,
or put some in a plastic freezer bag to freeze for the future.
