Pumpkin Pie Spiced Almonds

Pumpkin Pie Spiced Almonds would make a lovely stocking stuffer or hostess gift or holiday lunchbox snack.  It takes no more than a minute to prep these tasty almonds and then they go in the oven for a quick toast.  Your house will smell quite nice as they bake too.

1 cup raw whole almonds
½ teaspoon cinnamon
1 ½ teaspoon pumpkin pie spice
¼ teaspoon sea salt
2 Tablespoon maple syrup
½ teaspoon vanilla extract

Preheat the oven to 325 degrees Fahrenheit. While the oven is preheating, pour the almonds into a large mixing bowl. Add the cinnamon, pumpkin pie spice, and salt — toss to coat. Drizzle the maple syrup and vanilla extract on the almonds and stir until all almonds are coated with the spices and maple syrup. Spray a foil lined cookie sheet with cooking spray and spread the almonds on the sheet in a single layer. Cook for 15-20 minutes, flipping once, until almonds are roasted. Let cool completely before storing in an airtight container.
