Balsamic-Honey Marinated Chicken

Recipe from Southern Living Magazine
Husband-Tested in Alice’s Kitchen
Serves 4 to 6

This is just the easiest dish to make that is company-worthy. Just pour the marinade ingredients into a plastic bag, drop in the chicken pieces and let the marinade do its thing for a couple of hours in the fridge while you do something fun.  Pop it in the oven to roast awhile and then serve it over couscous or rice to soak up the delicious sauce along with another side dish and you’re good to go.  You can even roast other veggies on a baking sheet on another oven rack while the chicken is baking. Easy, easy, yummy, yummy!  All of the ingredients, including local chicken and honey, are available at Lost River Market & Deli.

¼ cup balsamic vinegar
¼ cup honey
¼ cup olive oil
2 Tablespoons chopped fresh rosemary or 2 teaspoons dried
1 teaspoon Kosher salt

3 pounds chicken breasts with bone and skin

Combine all marinade ingredients in a large plastic zip lock bag.  Put chicken pieces in the bag and seal.  Marinate the chicken in the refrigerator at least 2 hours.  Remove chicken and marinade from bag.  Place the chicken and the marinade in a lightly greased 13” x 9” baking dish.  Bake for 45 minutes in a preheated oven at 375°F.  Every 15 minutes or so, spoon the marinade over the chicken.  Serve the chicken with the marinade/sauce over rice or couscous.  YUM!
