Homemade Fudgsicles (vegan)

Makes 8-10 (depending on how big the molds are)

These homemade fudgsicle 
are rich, fudgy, and irresistibly chocolatey. They’re also dairy-free, refined sugar–free, and made with simple, wholesome ingredients. They make a great dessert on a very hot day.  And as you can see, the hubster loved them!  

Ingredients:
1 (13.5 oz) can full-fat coconut milk
1 cup raw cashews or ½ cup cashew butter (peanuts or almonds would also work)
½ cup pure maple syrup 
½ cup unsweetened cocoa powder
1 tsp pure vanilla extract
¼ tsp salt

Instructions:
1. Add all the ingredients to a high-speed blender and blend until smooth and creamy. (If you don’t have a high-speed blender, use cashew butter instead of cashews.)
2. Divide the mixture evenly between 8–10 silicone popsicle molds.
3. Freeze for 6–8 hours, or until fully solid.
4. Once frozen, remove the popsicles from the molds by gently pushing them up from the bottom of the molds.
5. Dig in and enjoy! Store any leftovers in the freezer.

Carrot Cake Baked Oatmeal (Vegan)

These baked oats are sooooo delicious.  Make a batch tonight so that you’ll have a great breakfast to look forward to all week.  I serve mine topped with Homemade Instant Pot Cashew Yogurt and whatever fruit/berries are in season.  

Ingredients
2 cups rolled oats
¾ cup oat flour
2 tsp cinnamon
1 tsp ground ginger
1½ tsp baking powder
1½ cups grated carrot
2 cups unsweetened cashew milk or other plant milk (I use soy milk.)
½ cup unsweetened vegan yogurt 
⅓ cup maple syrup
1 tsp vanilla extract
¼ cup crushed walnuts or pecans plus more for topping, if desired

Cashew Cream Cheese Icing (Optional) I just topped mine with plain yogurt each morning.
1 cup cashews unsalted
1 cup unsweetened coconut yogurt
½  lemon, zested and juiced
¼  cup maple syrup

Instructions
Preheat the oven to 375F and grease or line a 9 x 13 baking dish with parchment paper.
Add all of the dry ingredients apart from the walnuts to the baking dish, including the oats, oat flour, baking powder, cinnamon and ginger. Mix. Then add the wet ingredients, including the carrot, yogurt, maple syrup, plant milk and vanilla. Stir until fully combined.
Top with crushed walnuts if desired, and place in the oven for 50 to 55 minutes until cooked through.
While the baked oatmeal cooks, you can make the optional cashew cream cheese icing by adding all listed ingredients to a high speed blender or food processor. Combine until smooth, and ice the top of the oatmeal once cooled. Store the oatmeal in the refrigerator for up to 4 days.

Notes
If you don't have oat flour, you make your own in a food processor or coffee grinder. Simply grind some oats until you get a fine flour.
For a nut-free version, you can use sunflower or pumpkin seeds. As for the frosting, you can blend up some plain tofu instead of the cashews.
It's possible to make a similar baked oatmeal dish using zucchini. Bear in mind, zucchini has a higher water content, so you will need to squeeze the moisture out before adding zucchini into the pan.

Healthy Rice Crispy Squares (gluten-free and dairy-free)

Makes 9 to 12 squares depending on how big you wish your squares to be.

These delicious rice crispy treats is given a delicious chocolate twist with cocoa powder and natural sweetener. We like eating one with a cup of hot tea.  

Ingredients
4 cups brown rice crisps cereal (Nature's Path is great, but you can use
any brand)
¼ cup natural almond butter
1/3 cup raw honey
¼ cup Earth Balance vegan butter 
3 Tablespoons cocoa powder
¼ cup shredded, unsweetened coconut
1 teaspoon vanilla extract (optional)
Pinch of salt (optional)

Instructions
1. In a pan over low heat melt the vegan butter, almond butter, and honey
and stir until well combined.
2. In a large bowl add the rice crisps cereal, coconut, and cocoa powder.
3. Pour the melted almond butter mixture over the cereal mixture and stir
until well combined.
4. Press the mixture into a 8x8 pan lined with parchment paper (the
smaller the pan the thicker the squares).
5. Top with another piece of parchment paper and press the mixture firmly
into the pan. Very firmly.
6. Place the pan in the freezer for 1 hour and move to the fridge and leave
overnight.
7. In the morning cut into squares (9 or 12 squares depending on the size you wish) and enjoy!
8. Store the remaining bars in the fridge.

Easy Plum Compote (Vegan)

This delicious Plum Compote is perfect warm or cold on ice cream, yogurt, oatmeal, pancakes, waffles and more.
 
Ingredients
7 plums
2 Tablespoons maple syrup
1 Tablespoons lemon or orange juice
2 Tablespoons water
1 cinnamon stick
1 teaspoon vanilla

Instructions
Wash and halve the plums. Remove and discard the stones, leave the skin on them and cut into quarters.
Add the maple syrup, water, lemon juice, cinnamon stick and vanilla to a pot. Heat for a few minutes until the sugar dissolves.
Add the plums and bring to the boil.
Reduce the heat and cook, stirring occasionally, for 10-15 minutes or until the fruit begins to break down. The syrup will thicken slightly as it cools.
Enjoy warm or allow to cool and store in a jar in the fridge for up to 10 days.

Best Peanut Butter Cookies Ever

Makes about 24 cookies

These fabulous peanut butter cookies are dangerous.  You will need major will power to keep from eating them all at once.  Absolutely scrumptious!!!

7.5 ounces by weight all-purpose flour (1.5 cups measured) 
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon kosher salt
1/2 cup unsalted butter softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar* (I used dark brown sugar, but light will work too.)
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup creamy peanut butter**
Flaky sea salt, optional for sprinkling over the top

Preheat the oven to 350F.
(I highly recommend weighing out the flour before using.) 
In a medium bowl, whisk to combine the flour, baking soda, baking powder, and salt. 
In another medium bowl, use a hand mixer to cream together the butter, sugar, and brown sugar, for about 60 seconds, until fluffy and light.
Mix in the egg and vanilla extract for about 30 seconds, until combined.
Mix in the peanut butter for an additional 30 seconds, until combined.
Add the dry ingredients to the wet, then mix just until the flour is incorporated. Take care not to over mix.
Using a medium cookie scoop, portion out scoops of dough directly onto a baking sheet. (Try not to smooth out the cookies.  What makes these especially nice, is the texture of the "rough ridges" you get when scooping out the dough.) You should get about 24 scoops of dough total (split them between two baking sheets).  If desired, sprinkle each cookie with flakey sea salt.
Bake*** for 13 minutes, until the edges are golden, but the middle is still soft. Let them cool for a couple minutes before eating. They are especially fantastic enjoyed warm out of the oven. 

Notes
*I've used both light and dark brown sugar and each works well. Use whichever you have.
**While you may have happy results using a natural peanut butter, using the creamy variety will make for a better texture. When using natural peanut butter, the cookies may be more crumbly and dry, with an inferior texture. Brands like Skippy, Jif, organic Whole Foods Brand etc. make peanut butters that are very creamy and spreadable. 
***Do not over bake these. Keep in mind that when you take the cookies out of the oven, they should seem excessively soft. There will be a little bit of carryover cooking, and the cookies will firm up as they cool, so you want to err on the side of underbaking. If the cookies turn out dry, simply put, they were over baked. They should be moist and gooey on the inside.

Freezing:
Completely Baked Cookies: Complete the recipe start to finish, then let the cookies cool completely. Place the cookies in an airtight container and freeze for up to 2 months. To enjoy, let them thaw at room temperature, for about 30 minutes.
Unbaked Dough: You can also freeze these unbaked. Scoop the dough onto a baking sheet, then freezing completely. Then remove the frozen dough balls from the tray and place in a bag to save space. For this recipe, thaw the dough back to room temperature before baking, which should take about an hour. If bake these straight from frozen, they won't bake quite as evenly.

Storage: Make sure to store these in an airtight container, or they will dry out. These cookies will last about two days at room temperature before losing too much flavor and freshness. Technically they will keep longer than this, but I think the taste is too inferior, and at that point you’d be better off freezing them. See the freezing instructions above.

Make-ahead instructions: After making the dough, scoop it while it's still at room temperature, then keep those dough scoops in the fridge on a sheet pan. Otherwise, you'll need to bring the dough to room temperature in order to scoop again. Make ahead up to 2 days in advance. 

Double-batch: You can absolutely double or triple this recipe with no problem.

Strawberry Oatmeal Bars (Vegan)

We thought these strawberry oatmeal bars were delightful.  Of course, the husband loved having this seasonal treat.  These had just the right amount of sweet to them.  By using mashed banana and just a bit of maple syrup, the flavor of the berries really comes through. (I followed the original recipe to the letter, with this exception… I added about ½ teaspoon vanilla to the berry mixture and ¼ teaspoon almond extract plus ½ teaspoon sea salt to the dough mixture.)

Dough:

2 cups (205 g) oats 

1 cup (120 g) almond flour* 

1 cup (90 g) oat flour 

1 small (80 g) banana, mashed* 

1/4 cup (80 g) maple syrup or agave syrup

1/4 cup (60 g) canned coconut milk*

2 teaspoon baking powder

½ teaspoon sea salt

¼ teaspoon almond extract

Strawberry Filling:

3 cups (450 g) diced strawberries

1/3 cup (105 g) maple syrup or agave syrup

2-3 teaspoon fresh lime or lemon juice

5 teaspoon chia seeds

3 teaspoon cornstarch or potato starch 

½ teaspoon vanilla extract

Instructions:

(I highly recommend using a kitchen scale for this recipe and measuring the ingredients in grams.) 

Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius).

Put the ingredients for the strawberry filling in a saucepan, bring to a boil, let it simmer for 5-10 minutes, and stir occasionally.

Mix all ingredients for the dough in a bowl by either using your hands or a hand mixer.

Press 2/3 of the dough evenly into a greased or lined baking dish. The pan I used measured 7 x 11 inches (18 x 28 cm).

Pour the strawberry filling over the crust.  Crumble the remaining 1/3 dough on top.  Bake in the oven for 20-25 minutes. 

Notes:

*Banana: Use banana or applesauce for a low-fat version. If you prefer a flaky/buttery soft crust, I would recommend using 40 grams banana (or applesauce) and 40 grams vegan butter (margarine).

*Almond flour: You can use any ground nuts/seeds of choice (e.g. hazelnuts, shredded unsweetened coconut) instead of almond flour.

*Coconut milk: You could use oat cream or soy cream instead of canned coconut milk.

*Other reviewers said that the bars could be frozen for up to 3 months.  Other berries can be used.  Frozen strawberries/berries will work.

Chocolate Cherry Cake (Vegan & Gluten Free)

Oh!!  This cake!!!  It was beautiful and so delicious that everyone had a second piece!!  It looks quite fancy, but it was very easy to make.  You can make it a layer cake by doubling the ingredients.

Ingredients:
1¼ cup (133 g) quick-cooking oats, blended into a fine flour*
⅓ cup (27 g) cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
2 flax “eggs” (2 tbsp ground flax + 5 Tablespoons water)
1 cup unsweetened soy milk*
½ cup (130g) unsalted almond butter
½ cup (75g) coconut sugar
1 Tablespoon apple cider vinegar
½ teaspoon vanilla extract
½ teaspoon almond extract (optional)
(I added 2 teaspoons of espresso powder to the dry ingredients as suggested by one of the reviewers.)
For the Cherry Jam:
2 cups of pitted cherries (fresh or frozen) (I used frozen.)
2 Tablespoon maple syrup or coconut sugar
⅛ teaspoon almond extract (optional)
1 Tablespoon filtered water
For Serving:
1 cup coconut whipped cream* (I whipped 1 cup of Silk Dairy Free Heavy Whipping Cream Alternative and then added ¼ cup powdered sugar + 1 teaspoon vanilla.) 
Chopped and/or shaved chocolate (optional)

Instructions:
Preheat the oven to 350F and lightly grease or spray a 9” cake pan with a neutral cooking oil.
Prepare the Wet Ingredients: Mix the ground flax together with filtered water to create a flax “egg” in a small bowl. Combine the soy milk and apple cider vinegar in the base of a medium bowl – the vinegar will curdle the milk to create a “buttermilk”. Let both mixtures sit for at least 5 minutes, then add the thickened flax egg to the larger bowl with the almond butter, coconut sugar, vanilla, and almond extracts. Whisk until well-combined.
Mix the Dry Ingredients together in a separate, larger bowl. Form a well in the center of the mixture, pour in the wet ingredients, and use a spatula to mix everything together until no clumps remain. Pour the cake batter into the cake pan and bake on the middle rack for 20-22 minutes. (If you are baking multiple cakes, bake for 23-25 minutes).
Once cooked, remove the cake from the oven and let sit in the pan for 5 minutes before loosening the edges with a butter knife and flipping onto a baking rack to let cool completely.
Make the Cherry Compote: in the meantime, add all of the ingredients of the cherry compote to a large, nonstick pan. Bring the mixture to a simmer over medium-high heat, stirring occasionally. Let the cherries cook down for 15-20 minutes, stirring occasionally. Set the compote aside and let cool completely.
Assemble the Cake: top the cake with a layer of coconut cream, then spoon the cherry compote (and extra liquid) on top. Garnish with chopped and shaved chocolate, if desired. Serve immediately – leftovers will keep in the fridge for up to 5 days.

Notes: The recipe listed above makes one cake. If you would like to create a layered cake, double all of the ingredients (compote and cream included)
Nut Allergies: replace the almond butter with tahini or sunflower butter
Coconut Whipped Cream: If you don’t want to make it yourself you can replace it with store-bought coconut whipped topping or a vanilla frosting of your choice! You can also use a super-thick coconut yogurt for a completely sugar-free option.
Other Substitutions: Almond butter can be replaced with another nut or seed butter and coconut sugar can be replaced with brown sugar or another granulated sweetener. I do not recommend replacing the soy milk* as other plant milks do not create a good “buttermilk” due to lower protein content. This recipe has not been tested with any other flours.

Plant Based Magic Cookie Bars (Vegan)

Makes 8 Generous Servings OR 16 Perfect Treats

These scrumptious treats will be perfect for the lunchbox or a picnic. They are quite easy to make using a high speed blender and would be a great snack to make on your food prep day.  I love that they are sweetened with dates.  

Crust
1 cup (120g) almond flour
1 cup (80g) gluten-free rolled oats, ground into a flour
1/2 cup (112g) pitted dates
1 teaspoon Braggs liquid aminos (This may sound like a strange addition, but you won't taste it at all.  You can substitute sea salt for the liquid aminos, if you wish.)
Filling
1/3 cup (26g) gluten-free rolled oats
1/3 cup (75g) pitted dates
1 cup (236ml) water
1 teaspoon vanilla extract
Toppings
1/2 cup (47g) shredded unsweetened coconut
1/2 cup (85g) vegan chocolate chips
1 cup (150g) chopped pecans 

Preheat oven to 350°F (180°C). Grease or line a 9" X 9" (or 8" X 8") baking pan with parchment paper.  
Blend crust ingredients in a blender or food processor until mixture almost sticks together when pressed together. 
Press crust firmly into the bottom of the greased or parchment-lined baking pan.
Blend the filling ingredients in the same blender until dates are completely pulverized.
Pour filling over the crust. (The filling will be thin or watery.  It's okay.  It will turn out in the end.)
Sprinkle the toppings one at a time over the filling and lightly press the toppings down with a fork so that a little of the filling comes through.
Bake for 35 minutes.  Cool completely before serving.  Cut into 8 bars or 16 small squares.  Store in an airtight container in the fridge.

Tahini Popsicles (Vegan)

Makes 6 popsicles

This was surprisingly good!  It reminded us of a mild salted caramel ice cream dessert.  So, if that's your thing, you're going to love these frozen treats.  I think these would be a fun and delicious ending for a casual dinner party.  

1 (14 oz.) can full-fat coconut milk
1 very ripe banana
2 Tablespoons tahini 
3 Tablespoons maple syrup 
1 teaspoon vanilla extract
Pinch of sea salt

Combine all of the ingredients in a high speed blender.  Blend until smooth.  Pour into popsicle molds.  Freeze for at least 6 hours until set before serving.

Homemade Fudge Pops

Makes 10 (2 oz.) popsicles

 

It’s just too darn hot right now to bake a summer berry pie. No need to fret though.  We can still have dessert that doesn’t heat up the kitchen or the cook to make.  These Homemade Fudge Pops are delicious and refreshingly cool.  All that is needed are a few ingredients, a whisk, and popsicle molds.

 

2/3 cup pure maple syrup (not pancake syrup)

½ cup unsweetened cocoa powder (I used the “special dark” variety.)

2 teaspoons pure vanilla extract

1 cup + 1 Tablespoon plain yogurt or Greek yogurt

1¼ cups milk or unsweetened almond milk

 

In a medium bowl with a lip (for easy pouring), whisk together the syrup, cocoa powder, and vanilla until thoroughly combined and no clumps are left.  Slowly whisk in the yogurt and milk.  Pour the mixture into popsicle molds, add a popsicle stick, and freeze.  When you are ready to eat them, run a little warm water on the outside of the molds to loosen them up so the popsicles come out easily.

Heart “Beet” Chocolate Cake

Makes 1 (8-inch) round or square cake

This cake is mmmm-good and perfect with a cup of hot tea. 

Cake
4 medium beets*, scrubbed
2 Tablespoons virgin coconut oil, plus more for the pan
½ cup Dutch-process cocoa powder, plus more for the pan
1½ cups almond flour
½ teaspoon baking soda
½ teaspoon ground cinnamon
2 oz. bittersweet chocolate, coarsely chopped (I used bittersweet chocolate chips.)
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
4 large eggs
1¼ cups packed brown sugar (I used Sucanat.)
1 teaspoon kosher salt
Glaze
4 oz. bittersweet chocolate, coarsely chopped (I used bittersweet chocolate chips.)
1 Tablespoon virgin coconut oil
¼ teaspoon vanilla extract
Pinch of kosher salt
Gold Luster Dust (For serving; optional)

Cake: Cook the beets in a pot of boiling unsalted water until tender, 30-40 minutes depending on size.  Drain and rinse the beets under cold water until they are cool enough to handle.  Cut off the stem ends and peel.  Cut into large pieces and add them to a blender along with 2 Tablespoons of water.  Blend until a smooth puree forms.  It should be the consistency of applesauce.  Measure out 1 cup of puree for the cake.  Reserve the remaining puree for another use. (*I used 3 large beets, one golden, and ended up with 3 cups of puree.  I froze the extra beet puree in 1-cup containers for future cakes.  The puree can also be added to smoothies.) Preheat the oven to 350F.  Line the bottom of an 8” round (or square) cake pan with parchment paper.  Grease with oil and then dust with cocoa powder, tapping out the excess.  Whisk the almond flour, baking soda, cinnamon, and remaining ½ cup cocoa powder in a medium bowl; set aside.  Heat the chocolate and remaining 2 Tablespoons oil in a medium heatproof bowl set over a saucepan of barely simmering water, stirring often, until melted.  Remove the bowl from the heat.  Stir in the vinegar, vanilla, and reserved 1 cup beet puree until smooth. Set aside.  Beat the eggs, brown sugar, and salt in the large bowl of a stand mixer fitted with the whisk attachment on medium-high speed until more than tripled in volume and mixture holds a ribbon for several seconds when the beater is lifted above the batter. This will take 5-7 minutes.  Thoroughly beating the eggs is key to creating an aerated, light crumb and is a critical step when using gluten-free ingredients. Pour the chocolate-beet mixture into the egg mixture and beat on medium-low speed until combined.  Turn the mixer off and gently tip in the reserved dry ingredients.  Beat on the lowest speed, scraping down the bowl as needed, until combined. Transfer the batter to prepared pan. Bake cake until a tester inserted into the center comes out clean and the top springs back when gently pressed, 45-50 minutes.  Let the cake cool 10 minutes in the pan.  Carefully run a knife around the edges of the pan, then invert the cake onto a wire rack and allow it to cool completely before spreading with the glaze.
Glaze: Heat the chocolate, oil, vanilla, and salt in a medium heatproof bowl set over a saucepan of barely simmering water, stirring often, until the chocolate is melted.  Let cool, stirring occasionally, until the mixture is thickened and cool enough to touch, about 10-15 minutes.  Place rack with the cake over a piece of waxed paper or on a rimmed baking sheet. Pour the glaze over the center of the cake to cover the top.  Spread the glaze a bit so that it runs over the sides of the cake in dribbles.  Sprinkle with luster dust (if using).  Let sit at room temperature until the glaze is set, 2-3 hours.  Cover and store the cake at room temperature for up to 2 days.

Snickerdoodle Tahini Date Smoothie (Vegan)

This smoothie is a very nice change to the usual fruit and banana smoothies that are the usual.  We loved the tahini flavor in this smoothie.  I also loved that one of the ingredients is frozen cauliflower. The cauliflower not only adds some nutrition to the mix, but also helps to thicken the smoothie. You might think that’s a bit strange in a smoothie, but the cauliflower is undetectable. 

Smoothie Ingredients:
3 large pitted Medjool dates (¼ cup packed pitted Medjool dates)
1 cup unsweetened almond milk OR light coconut milk, plus more to thin the smoothie, if needed
¾ cup frozen cauliflower
1 Tablespoon tahini (You could substitute any nut butter you’d like, but tahini is quite nice.)
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon

Optional Smoothie Add-Ins:
1 Tablespoon cocoa powder
1 scoop of your favorite protein powder
1 Tablespoon flaxseed meal
¼ cup gluten free rolled oats

Soak the pitted dates in 1 cup of hot water for at least 5 minutes to soften them up.  While the dates are soaking, measure out the remaining ingredients.  Drain the pitted dates. Add them to a high speed blender along with the remaining ingredients. Add in and of the optional ingredients, if desired. Blend until smooth.  Add more almond (or coconut) milk to thin the smoothie, if needed.

Gingerbread Oatmeal & Buckwheat Breakfast Porridge (Vegan)

Makes about 6 (½ cup servings)

Treat yourself this winter with this delicious porridge. Make it on the weekend and then enjoy it through the week. (It can also be prepared in an Instant Pot.  Directions at the bottom.)

Porridge:
¾ cup steel cut oats
½ cup raw buckwheat groats, toasted on the stove until golden and fragrant
3½ cups water or non-dairy milk
1-3 Tablespoons dark brown sugar or Sucanat (I used 3 Tablespoons because that was in the original recipe, but I thought it made the porridge more in the dessert category J , so next time I make it, I will use 1 Tablespoon of sugar or maybe even maple syrup.)
1 Tablespoons dark molasses
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¾ teaspoon ground ginger
1/8 teaspoon ground cloves
¼ teaspoon sea salt or Kosher salt

Serving Options:
Non-dairy milk
Pear or apple, sliced or chopped
Pecans, toasted and chopped

Before you go to bed, toast the buckwheat groats in a dry skillet. Then measure out all the dry ingredients into a medium bowl or jar along with the toasted buckwheat and cover. Set aside on the counter. In the morning, bring the water or non-dairy milk to a boil in a large saucepan on medium-high heat.  Add all of the porridge ingredients to the pot and stir well. Reduce the heat to a low simmer.  Simmer, stirring occasionally, until most of the liquid has been absorbed to the desired consistency and grains are cooked through.  (This took about 20 minutes.  The original recipe stated 30 minutes, but I found that the porridge was beginning to scorch.  So, begin checking at 20 minutes and go from there.) If the grains haven’t cooked to your liking after the liquid has been absorbed, add another 2 Tablespoons water or non-dairy milk at a time, until cooked through.
Serve warm with a splash of non-dairy milk, pear chunks, and toasted pecans. 
Store leftovers in an airtight container in the refrigerator for up to a week.  Add a few tablespoons of water to loosen it up while reheating.

Instant Pot Directions: (Not Husband-Tested)
Add all the ingredients to the instant pot and stir to combine.  Place the lid on the pot and make sure the pressure release valve is in the sealing position.  Press the pressure cooker button, making sure it’s on high and set the time for 6 minutes.  When the timer is up, let the pressure cooker naturally release for 10 minutes.  When the time is up, release any additional pressure by carefully moving the pressure release valve into the venting position.
