Pop-a-Date Treat

Makes 1 treat

This little explosion of yumminess tastes just like a candy bar to us.  You can make them in advance and keep them in the fridge for when you need a little sunshine in your day.  A small box of these would make a lovely gift for someone with a sweet tooth. They make a perfect treat for a lunchbox.

1 pitted Medjool date
½ teaspoon almond butter
1 teaspoon bittersweet chocolate (70%) (This can be a teaspoon of mini chocolate chips or about ¼ of a standard square of chocolate.)
Using a paring knife, make a small slit part way through the pitted date to create a little pocket.  Spoon the almond butter into the pocket.  Tuck the chocolate into the almond butter.  Enjoy!
