Pretzel Stuffed Dates (Vegan)

Makes 1 dozen

These are such an easy treat to make, perfect for a lunchbox or afternoon pick-me-up.  They are made with wholesome ingredients and they taste quite decadent.

12 soft Medjool dates
6 pretzel sticks (I found gluten-free pretzels and bought those so I could serve them to a friend who is gluten intolerant.)
2 Tablespoons nut or seed butter (I used almond butter.)

Optional:  melted dairy free dark chocolate; flaked sea salt; unsweetened shredded coconut 

Using a sharp paring knife, make an incision along the length of each date, but try not to cut the date in half.  Remove the pits from the dates.  (There will be one pit in each date.) Using 1/2 a pretzel stick, place the piece inside each empty date.  Dollop the nut or seed butter inside the date over the pretzel piece.  If desired, drizzle the filled dates with melted chocolate and or sprinkle a bit of seal salt or shredded coconut flakes over top.  Enjoy!
Store these dates in the fridge for up to 2 weeks.  (The pretzels may lose their crunch when stored for a long period of time.)
