Cabbage Pepper Patch Chicken Sausage Dinner

Cabbage Pepper Patch Chicken Sausage Dinner with Zucchini Parmesan Loaf
Serves 4
Husband-Tested Recipe from Alice’s Kitchen

This to me is comfort food. And, it takes only a half-hour to make. I actually came up with this when I cleaned out the fridge.  It seems I had lots of halves of everything…peppers, onion, cabbage. So, I put ‘em all together with some chicken sausage. Yum!  Serve this dinner with slices of Zucchini-Parmesan Loaf for an unforgettable weeknight meal.

Olive oil
½ red bell pepper, chopped
½ green bell pepper, chopped
½ sweet onion, chopped
2 cloves garlic, minced
½ head of green cabbage, shredded or chopped
1 cup Homemade Vegetable Broth
6 small red potatoes, cut into bite-sized pieces
3 chicken sausage links, thickly sliced (I used Miller Jalapeño Cheddar Chicken Sausages.)
Kosher salt, to taste
Freshly ground pepper, to taste


To a hot skillet that has a lid, add 1 to 2 Tablespoons of olive oil.  Add the peppers, the onion and the garlic.  Stir around a bit and allow them to soften.  Add the cabbage.  Cook about 2 minutes.  Add the potatoes and the broth.  Sprinkle with salt and pepper, to taste.  Bring to a boil.  Turn down the heat to simmer.  Cover and simmer for about 10 minutes.  Add the chicken sausage. Cover again and cook until the potatoes are tender, another 5 minutes or so.
