Strawberry-Mint Sparkling Limeade



Recipe from Cooking Light
Husband-Tested in Debbie’s Kitchen and Edward’s Kitchen

You know spring has sprung when the strawberries are red and plump and the mint starts to take over.  On a warm spring evening after strawberry picking, serve this refreshing drink to your special friends. For a kid-friendly or designated-driver version, substitute 3 cups chilled club soda for the wine.

3 cups sliced strawberries
½ cup loosely packed mint leaves
½ cup fresh lime juice
¼ cup water
¼ cup agave nectar or honey
1 bottle sparkling wine, chilled OR 3 cups chilled club soda

Place first 5 ingredients in blender. Process until smooth (about 1 minute.)

Pour about 1/2 cup strawberry mixture into each of 6 glasses. Slowly pour about 1/2 cup wine (or club soda) into each glass. (When adding the wine or soda, pour slowly down the edge of the glass to tame the foam.) Stir to combine. Garnish with whole berries if desired.
