Mashed White Beans


Here Mashed White Beans replace mashed potatoes as a side to
Roasted Chicken with Cranberry Sauce and a green salad with Cranberry Vinaigrette.

Here’s a quick and easy, healthy side dish.  Serve in place of mashed potatoes for a change.  If you have leftovers, reheat them in the microwave or use them as a spread on a sandwich or wrap.  Pictured above are the MashedWhite Beans along side a green salad with Cranberry Vinaigrette and RoastedChicken with Cranberry Sauce.  Yum!

1 Tablespoon olive oil
2 cloves garlic, minced
2 cans (19 ounces each) cannellini beans, drained and rinsed
1 Tablespoon chopped fresh sage or 1 teaspoon dried
Kosher salt and freshly ground pepper

In a large skillet, heat oil over medium heat. Cook garlic, stirring often, until golden, about 1 minute.
Add beans, sage, and 1¼ cups water. Cook, stirring often, until beans are hot and liquid thickens, about 4 minutes.
Mash beans, leaving some whole. Season with salt and pepper.
