Chocolate Chip Pecan Pie

I had made this pie ages ago and recently came across the recipe again while looking for things to bake for the holidays. I had written “Yummy” on the recipe page, so I thought I’d give it another whirl. I’m glad I did! This is just the easiest dessert to make and so delicious too! I would suggest keeping the pecans chunky as you chop them. The crunchy nuts mixed in with the creamy chocolate will make you and your husband (or guests) happy campers! I served this slightly warm from the oven with sweetened whipped cream.

3 large eggs, room temperature
1 cup Karo Dark Corn Syrup
½ cup sugar
2 Tablespoons unsalted butter, melted
1 teaspoon vanilla
1 cup coarsely chopped pecans
½ cup semisweet chocolate chips
Perfect Pie Dough or Perfect Pie Dough #2 (recipes on this blog)

Preheat oven to 350 F. In a medium bowl, beat the eggs slightly. Add corn syrup, sugar, butter, and vanilla. Stir until well blended. Stir in pecans and chocolate chips. Pour into unbaked pie crust. Bake 50 to 60 minutes or until filling is firm around the edge and slightly firm in the center. (The filling will puff up a bit when it’s done and then fall a bit as it cools.) Cool on wire rack.
