Vanilla Bean Sugar

Recipe from Martha Stewart and Tested in Alice's Kitchen
Makes 4 cups

This makes a very nice gift for all your sweet friends for Valentines Day or any day you want to make a little something special for them. Use vanilla sugar in your coffee, tea or on fresh fruit for a delicious treat. Vanilla beans can be found in the bulk spice section of the Lost River Market & Deli.
When buying vanilla beans, make sure to look for moist, shiny, brownish-black beans.
Whole vanilla beans have a much more complex, deeper vanilla flavor than extract and work very well in custard or a rice pudding.


4 cups sugar
3 to 4 vanilla beans

Place sugar in a medium bowl. Using a sharp paring knife, halve vanilla beans lengthwise. Scrape vanilla seeds from the pod into the sugar using the side of the knife. Mix vanilla seeds and sugar using your finger tips or a fork, to evenly distribute the seeds throughout the sugar. Strain sugar mixture through a fine mesh sieve into an airtight container. Halve vanilla pods crosswise, and submerge them in sugar. Cover and store in an airtight container up to 3 months.
