This is really very tasty and good enough for company! And, it’s so easy to make your own teriyaki
sauce, even the kids can help. Be sure to allow the meat to rest under cover to
let the juices settle, which will make the meat especially succulent. When I made this, it was pretty outside, so I
used the grill. When the weather doesn’t
cooperate, you can use your broiler.
2 Tablespoons
low-sodium soy sauce
1
Tablespoon olive oil
1
Tablespoon brown sugar
1
Tablespoon dry sherry
1
Tablespoon rice vinegar (I used brown
rice vinegar.)
1
garlic clove, minced
½
teaspoon finely grated fresh ginger (Save
time and use the kind in the jar.)
Pinch
red pepper flakes
1 pound
pork tenderloin
Combine
the soy sauce, oil, sugar, sherry, vinegar, garlic, ginger and red pepper
flakes, and stir until the sugar dissolves. Transfer to a resealable plastic
bag and add the pork tenderloin. Seal the bag and marinate the pork in the
refrigerator, turning once, for at least an hour or up to 8 hours.
Preheat the
broiler. Place the pork on a roasting pan and broil for 15 minutes, turning
once.
**I grilled the pork tenderloin until the internal temperature was 160
degrees F and then I allowed the meat to rest (covered with a plate) for about
10 minutes before slicing.
